Today is Christmas Card Day which honors Sir Henry Cole of England who created the first commercial Christmas card in 1843. That makes today the perfect time to get started on your own cards for the holiday season.
Between shopping for gifts and decorating, that doesn’t leave much time to write out countless Christmas cards. This year you could save time and money by sending digital Christmas cards. Digital cards can be personalized with a family photo, heartfelt video and a thoughtful message.
They are one of the easiest ways to spread holiday cheer and they are good for the environment. You help the Earth by cutting back on unnecessary paper waste during the holiday season.
To celebrate, write out some Christmas cards to celebrate today, real or digital, either way, spread some holiday cheer!

I will be sending out cards this year to those near and dear loved ones. I think we need the holiday cheer right now and that’s my way of expressing it. This year more than ever I want to wish everyone a Merry Christmas and a Happy New Year.
I’m looking forward to 2021, hoping it will be a much better year for everyone. I don’t have everyones address so if you’d like a card, please let me know your address and I’ll send one out to you !

Today I’ll be busy in the kitchen cooking up another new recipe. On the menu is:
Wednesday - West Coast Snappy Joes
1 pound lean ground beef
1 onion, chopped
1 garlic clove, minced
1 can, 8 oz., tomato sauce
1/3 cup sun-dried tomato halves, chopped
1/3 cup chopped roasted sweet red peppers
2 tbsp. chopped pickled jalapeño peppers, optional
2 tbsp. tomato paste
1 tbsp brown sugar
1 tbsp. balsamic vinegar
1/2 tsp Montreal steak seasoning
1/2 tsp pepper
6 whole wheat hamburger buns, split
Optional toppings : Chopped avocado, sour cream, shredded cheese and chopped green onions.
In a large skillet, cook beef, onion and garlic over medium heat until beef is no longer pink, breaking up beef into crumbles; drain.
Stir in tomato sauce, sun dried tomatoes, roasted peppers, jalapeños, tomato paste, brown sugar, vinegar, steak seasoning and pepper.
Bring to a boil. Reduce heat, simmer, uncovered, until thickened, stirring occasionally. Serve on buns with toppings as desired.
You could also pour the filling over noodles or mac and cheese. But I’m having it on sandwich buns. I don’t add the jalapeños as they make it too spicy for me. I like my food on the mild side.
It’s also my day to go grocery shopping so I made a menu for next week so I’d know what I needed to buy.
On the menu for next week is:
Monday - Make ahead Brocolli Cheddar Quiche
Wednesday - Slow Cooker Chicken with Rosemary and Mushrooms over Linquine
Friday - Eggs Benedict Casserole
Weekend - Slow Cooker Chicken with potatoes, Carrots and Herb Sauce.
Cooking only every other day is working out nicely for me and helps out using up the leftovers. I even still put some of them away in the freezer for later use.

You eat so well! I need to do more meal planning instead of just looking in the pantry, fridge and freezer and wondering what to fix!
I took half my Christmas cards to the PO this morning ... but I'm still mulling over the others, with which I'd hoped to include a personal note. In a way, I'm thankful that list contains fewer and fewer names -- those who aren't on FB or Blogger and have no idea what's going on in my life. Maybe that's the reason annual 'news'-letters are going the way of the dinosaurs.

I haven't sent cards in a few years. I think we just got a handful of cards last year. Your menu for next week sounds very interesting Ma. Got my eye on some of them especially that egg benedict casserole.
