Today is National Date Nut Bread which is the perfect dish for the holiday seas. It’s delicious, healthy and easy to make.
The first date nut bread recipe appeared in print in 1939, but dates are one of the world’s oldest fruits. Date seeds have been found in archeology excavations of sub tropical areas around the world. Historians believe that the ancient Moors bright the date to Spain and later introduced it to America.
Dates are notorious for their high sugar count, so it is no surprise that mast date recipes do not call for any additional sweeteners. To celebrate today, try your hand a baking a homemade loaf of this festive treat. Don’t forget to top it off with a little cream cheese frosting!

There is no date nut bread in my future here but on the menu is left over chicken noodle soup. I forgot to post the recipe yesterday. But date nut bread is easy to make. It’s a quick bread which means it has no yeast and no need for kneading.
On the menu for Monday was:
Crockpot Chicken Noodle Soup
Makes 6 servings
1 lb. boneless, skinless chicken breast
3 stalks celery, sliced
3 carrots, pealed and sliced
1 onion, diced
2 garlic cloves, minced
1 tbsp thyme
1 tbsp. rosemary
1 tsp. salt
8 cubs chicken broth
8 oz. whole wheat noodles
Add the chicken celery, carrots, onion, garlic, thyme and rosemary into the slow cooker.
Pour in the chicken broth
Cook on high for 3 to 4 hours on high or 6 to 8 hours on low.
During the last 15 minutes, remove the chicken. Shred with a fork.
Add the chicken breast back in; as well as the egg noodles. Cook for the last 15 minutes.

Thanks for reminding me, I need to find some dates and make Tom's favorite bread! I'll never forget the first year I tried, the recipe failed to specify not to drain the dates. Before long, my hand mixer began to groan. Smoke started coming out and it died. Kaput. How we laughed and laughed ... and had to quick-like run to the store for another.
That soup sounds really good!
Yum on that chicken soup! I remember years ago my mom would get a gift basket from people she worked for and it always included dates. I do remember them being really sweet!
