Today is Cookie Day which is the day to celebrate baking a few batches of your favorite variety of cookies.
The English word cookie is derived from the Dutch word koekje, which means little cake. Dutch bakers used to test oven temperatures on small amounts of batter so they would not waste the entire cake mix if the temperature wasn’t right. It wasn’t long before they discovered these tiny pieces of cooked batter were actually quite tasty.
Cookies come in all differnt flavors shapes and sizes so we’re sure to find a favorite to enjoy today.

It’s getting to be that time of year to bake Christmas cookies. I used go make several different kinds but then that was when I had family at home to enjoy them. Now a days, I rarely make my own, but buy a few at at the store to have on hand during the holidays. They aren’t as god as homemade, but they make do.
So I’m not going to baking cookies today, but I am baking dinner, On the menu today is:
Petite Crustless Quiche
Makes 6 servings
Olive oil spray
1 Tbsp olive oil
1/2 medium onion, diced
1/3 cup chopped Bell pepper
2 garlic cloves, minced
1 medium tomato, diced
6 oz. turkey Keilbasa, diced.
3 cups baby spinach
5 whole eggs, beaten
4 egg whites.
1/3 cup milk
1/3 cup flour
1/2 tsp salt
1/8 tsp black pepper
3 oz. cheddar cheese
Preheat oven to 350 degrees. Spray a muffin pan with olive oil spray. Heat oil in a large nonstick skillet over medium heat.
Saute onions and salt of 5 minutes until wolf, add bell pepper, garlic tomato kielbasa and sauce for another 7 minutes. Add spinach and cook until wilted, Set aside.
Meanwhile in a large bowl, whisk the eggs, egg whites milk, flour, salt and pepper until smooth.
Add the cheese and coked kiebassa mixture to the bowl and mix well.
Pour into prepared muffin pan and bake for 28 to 30 minutes until they are firm or until an inserted knife in the center comes out clean.
These are perfect for a make ahead breakfast for a meal so I'’ll be having them for dinner today and breakfast tomorrow. They will last refrigerated 4 to 5 days or can be frozen. To reheat microwave 1 minute.
You can swap out the veggies for anything you like, and the keilbass can be swapped with ham or sausage. I added some flour , but if you prefer to make them lower carb, you can leave it out and add another egg.
Two muffin size quiches are perfectly satisfying and I really won’t need anything else.
I finally got a little chest freezer thanks to DS#5 who found it on sale Cyber Monday and delivered it to my house . I’m thrilled to finally have some extra freezer space. We put it in the sunroom as there is little room in the kitchen for anything else. Still it’s handy and will be easily accessible. The Sunroom is right off the kitchen.

I agree with Martha! Quiche used to be my favorite, but I've not tried making my own since they stopped selling "Pour A Quiche" in the dairy case. :) This is definitely getting added to my recipe file!
Tom's the 'cookie monster' in this house and so happens I've a roll of raw cookie dough chilling in the fridge. Happy Friday!

I could use that little freezer too! I will make that quiche recipe. Is it really 5 eggs and 4 egg whites? I wonder if it should say "or". I'm old, can't eat too many eggs! 😀
