Today is National Fritters Day which honors those delicious fried cakes filled with fruit or meat. They can be served as a snack, side dish, dessert or even the main course.
There is actually not much difference between fritter bater and pancake batter. They are both made with the same ingredients. Its only once fruit or meat is dipped into the raw batter and then fried that it becomes a fritter.
The first historical record of fritters dates back to 1665 when Samuel Pepys, an Englishman who served as a member of Parliament during the English Restoration period, noted in his diary that he would be enjoying some fritters before Lent.
To celebrate today, try making your own tasty fritters to enjoy.

If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
I love corn fritters which are easy to make by adding some corn to your batter. I like them for breakfast but they would also be a good side dish to have with today’s dinner which will be:
Grilled Tri-tip Sandwiches with Homemade BBQ Sauce
1/4 cup shallot diced
3 tbs bourbon
1 cup ketchup
1/2 cup apple cider vinegar
1/3 cup brown sugar
1 cup cocoa cola
1 tbsp. soy sauce
2 tsp bbq rub
2 1./2 lbs. tri tip
2 tsp. yellow mustard
2 tbsp. bbq rub
In medium size pot, add the shallots and cook until soft. Pour in bourbon and cook until reduced by almost half. Add the ketchup, vinegar, sugar, cola and soy sauce and stir.
Simmer covered on low for about 20 minutes and then transfer to a blender. blend on low just to break down any shallot pieces there might still be. Transfer to a jar. Rub the tri tip with mustard and then sprinkle with the bbq rub.
Place the trip tip onto the hottest part of the grill and sear for 5 minutes. Turn the tri tip over and repeat . Move the tri tip slightly away from direct heat and cook for another 20 minutes turning over periodically.
With about 5 minutes to go, start brushing the meat with the bbq sauce on both sides. Do this a few times.Once the meat is ready, transfer to a plate and cover with foil, let rest for 10 minutes. Slice the tri tip across the grain into thin slices and serve with extra sauce on the side.
A good substitute for bourbon in recipes is vanilla extract. I happened to have that but didn’t have any coke so I added beef broth instead.
I served my grilled tri tip on small slider buns, but you can add it to meany things like salads or just eat as is with some extra sauce on the side.
The pictures today are of the view from my porch yesterday when I looked out there was nothing but snow and more snow. Matter of fact it was plastered on the windows.We wound up with a good foot of snow with some drifts that were even higher. It was a heavy wet snow. Thankfully a couple of young men came along looking for a snow shoveling job and they got they driveway cleared for me. It was well worth the $20 they wanted to do the job.

What a blessing to have those young men come around when they did!
I never really knew what a fritter was (is). Tom makes something called Polish pancakes every now and then, but this sounds like a twist he'd enjoy.
We did observe National Egg Nog Month, about an hour ago. 'Didn't want to take the chance of it spoiling!
Wow that was a lot of snow!! Thankful you had help with snow removal! You are right, definitely worth the money!
