Today is National Cupcake Day which has been and an American culinary icon since the 19th century. Prior to cupcakes, ingredients used in baking were primarily weighed rather than measured. These delightful treats shifted the area of baking from weighing to measuring ingredients.
For many years, cupcakes were know and one two three four cakes because of their recipe: one cup of butter, two cups of sugar, 3 cups of flour, four eggs , plus one cup of milk and one spoon of baking soda. This formula is still the traditional cupcake recipe that many use today.
The worlds largest cupcake was displayed in July of 2009 at the Covent Garden Real Food Market in London. This cupcake was about 4 feet in diameter and weighed over 330 pounds. It contained 200 eggs and took over 50 hours to make.
To celebrate today head to a local cupcake shop and enjoy your favorite cupcake.

It seams like we’ve already celebrated this day, but this is what showed up on my calendar for today. I think the other cupcake days celebrated either chocolate or vanilla cupcakes.
I’ve already shown these pictures before too, but will do so again today, since they are still the best and most expensive cupcakes I’ve ever had.
There are lots of cute ideas for making Christmas cupcakes so that is what I’m sharing today.
One idea is Red Velvet cupcakes decked with frosting with glitter and iced snowflakes.
Another is to make a Christmas tree cupcake by setting a sugar cone on top the cake and icing it like a Christmas tree.
You can also make a Christmas wreath for the table by using multiple decorated cupcakes and putting them on a plate in the shape of a wreath.
Another clever idea I saw was to use candy to decorate the tops in Christmassy colors. They could be in any flavor shape or size. M & M’s are always fun. All it takes is some imagination and lots of frosting.
I usually take the easy way out and simply put some sprinkles on top the frosting. That always looks festive.
I’m happy to say that I persevered yesterday and got my cards done so soon they will be in the mail. DS#4 stopped in and took the cards to the post office to put in the mail for me.
Today is my day to get the laundry done so hopefully that will be a success too. My problem usually lies in the fact that it doesn’t always get put away on the same day. The last load of table cloths, etc from fall will get done, but there is a stack of fall things on the spare bed to get put away as well as some of my fall clothing.
Sooner or later it will all get done, I have nothing but time on my hands to get it put away. There certainly isn’t anything else on my calendar to do.

Cupcakes are always delicious, no matter what top they are! I have found the ones from Wal-Mart aren't too bad and they come in a wide assortment. Glad you got your cards done Ma!
