Today is National Pearl Harbor Remembrance Day which honors and commemorates the fallen U.S. citizens who were killed in the Japanese surprise attack on Pearl Harbor in Hawaii. The attack of the Japaneses Imperial Navy on Honolulu’s s Pearl Harbor base occurred on December 7, 1941 and resulted in the United States entrance into WWII. President Franklin Roosevelt described the attack on Pearl Harbor as a date which will live in infamy.
The USS Arizona Memorial at Pearl Harbor is one of the most visited places in Hawaii. Millions of people from across the world pay visit to this historical memorial each year.
2,403 Americans died and 1178 were wounded during the Pearl Harbor attack. Today, we honor those who lost their lives or were injured on December 7th, 1941, and we remember the fateful event that played a role in U.S. history.

This is a day of remembrance for many as they pay tribute to those who lost their lives in the Pacific. Although I don’t remember any relatives that died at that time, doesn’t mean there weren’t any. There is just no record of it happening at the time, but I did lose an Uncle during WWII, even if they weren’t involved in the attack on Pearl Harbor, the war affected everyone in on way or another. I’m so thankful for all those that serve in our military to keep us safe and protect us from our enemies.They will long be remembered and never forgotten.
Let us pray for peace in the world that wars will end and peace will reign in our hearts and minds.
As I try to move forward with my healthy diet I’m sharing another heathy recipe today.
Monday - Power Lasagna
9 whole wheat lasagna noodles
1 lb. lean ground beef
1 medium zucchini, finely chopped
1 onion, finely chopped
1 green pepper, finely chopped
3 garlic cloves, minced
1 jar, 24 oz., meatless pasta sauce
1 can 14.5 oz., diced tomatoes, drained
1/2 cup basil leaves, chopped
5 tsp. Italian seasoning
1/4 tsp pepper
1 carton, 15 oz. ricotta cheese
1 pkg. frozen chopped spinach, thawed and squeezed dry.
1 egg, beaten
2 tbsp. white balsamic vinegar
2 cups shredded mozzarella cheese.
1/4 cup grated Parmesan cheese.
Preheat oven to 350 degrees. Cook noodles according to package directions. Meanwhile in a 6 quart stock pot , cook beef, zucchini, onion and green pepper over medium heat until beef is no longer pink, breaking up beef into crumbles. Add garlic; cook 1 minute longer. Drain.
Stir in pasta sauce, diced tomatoes, basil, Italian seasoning and pepper; heat through. Drain noodles and rinse in cold water.
In a small bowl, mix riecotta cheese, spinach, egg and vinegar. Spread 1 cup meat mixture in a 13 by 9 baking dish coated with cooking spray. Layer with 3 noodles, 2 cups meat mixture, 1 1/4 cups ricotta cheese mixture and 2/3 cup mozzarella cheese Repeat layers. Top with remaining noodles, meat mixture and mozzarella cheese. Sprikle with Parmesan cheese.
Bake, covered, 30 minutes. Bake uncovered 10 to 15 minutes longer or until cheer is melted. Let stand 10 minutes before serving.
Makes 8 servings
I didn’t have fresh basil so used 3 tsp of dried basil instead and I used cottage cheese instead of ricotta. Making do with what I have on hand.
Power foods like whole grains, fresh veggies and protein combine to make this tasty lasagna more nutritious.
The week ahead is supposed to be a dark and cloudy one with little sunshine, so we’ll have to do our best to make some sunshine of our own this week! So let’s power up!

Never forget December 7, 1941! At the time, my father was stationed at Newport, RI. When my parents heard the news they made plans to spend the day out in the country. Knowing he'd be called back to duty, at least they were able to enjoy what would be their last picnic for a long, long time.
I am definitely making that power lasagna! Looks yummy! I do remember my mom talking about December 7, 1941. She was a young adult of 20 years old when it happened and I do think she had a brother or two that went off to war and safely made it back.
