Regardless of whether you rent or own,, today is an opportunity to take a moment to appreciate the roof over your head

No doubt about it, I am very thankful for my home. I no longer own my own home, I’m now a renter and for me at this time of my life it’s the best thing. I am no longer responsible for repairs or upkeep of a home, my landlord takes care of what is needed. Sure, I pay for it in my rent each month, where I used to be free of that. I owned my own house free and clear with no payments to make. But for me right now, it’s the best thing I can do for me.
I’m happy to have found a place that has everything I need. I have a laundry and also a storage shed that other places didn’t offer. I also have a sun room to enjoy giving me extra space and a car port to protect the car. It didn’t keep all the snow off the car due to blowing and drifting, but for the most part it is dry when it rains. I can unload my groceries without being out in the rain. It keeps me dry going from the car to the house. I do have to care for the yard, but that’s ok as I need the exercise and when I can’t do it one of my children will help out.
All in all I love my home, it has all I need and more. The neighborhood is quiet and privacy is never a problem. The neighbors pretty much keep to themselves and are never noisy. For the most part everyone is retired and old like me.
I didn’t forget to make my shopping list for the week and did plan a menu but forgot to post it yesterday which is when I usually do my shopping, But due to the weather I decided to do it today. The roads are now clear and safe for driving.
My Menu for next week is:
I’ve decided to cook a new dinner every other day. It’s only me here and I need to use up the leftovers, so this will make life easier for me.
Monday - Power Lasagna
Wednesday - West Coast Snappy Joes
Friday - Satifying Tomato Soup with Grilled Cheese Croutons
Weekend - Garlickly Chicken Dinner
On the menu for today is:
Chicken Tortilla Soup
It’s basically the light version of chili and a more flavorful version of chicken noodles soup. Packed with lots of flavor with veggies that are snuck in.
Yields 10 to 12 cups
1 lb. boneless skinless chicken breasts
6 cups chicken broth
1 bay leaf
2 tbsp.olive oil
1 onion diced
2 clove garlic, minced
1 large pepper from a can of Chilpoltie Pepper in Adobe sauce
1 tsp. paprika
28 oz. can diced tomatoes
1 large zucchini, diced
1 yellow squash, diced
1 15 oz can sweet corn, drained
1/4 cup fresh cilantro, chopped
Juice of 2 large limes
Salt and pepper to taste
In a medium sauce pan add chicken broth, bay leaf and chicken breasts. Bring to a boil cook until the chicken is cooked all the way through
Heat a large stock pot or dutch oven to medium high, add oil, diced onions and garlic. Saute’ until onions are translucent .
Add minced pepper, sauce and paprika. Stir and let cook 2 to 3 minutes.
Then add tomatoes. Stir and cook for 2 to 3 minutes. Add diced zucchini and squash. Season with salt and pepper. Stir and simmer for about 5 minutes
Remove the chicken from the pot of broth and shred using two forks. To the dutch oven add sweet corn , shredded chicken, lime juice, cilantro and chicken broth.
Turn heat down to medium low and let simmer 30 minutes to let all the flavors absorb.
Optional toppings: diced avocado, cheddar cheese
Serve with crunchy bread or crushed tortilla chips.

I've always been so thankful for the roof over my head and this year more so than ever. I think your home sounds like the perfect little place. I plan on doing the same in coming years or maybe downsize and buy a nice little maintenance free villa since rent in my area is ridiculously sky high. Your menu sounds perfect and delicious. Enjoy!
What an interesting-sounding recipe! During these cold times, Tom's taken to opening a can of Campbell's chicken noodle soup -- but said there were but 4 or 5 itty-bitty pieces of chicken. Disappointing.
Sounds like your home is a win-win situation. Were it not for Tom, I'd likely do the same. There's lots to be said about peace of mind, and not having to worry with house repairs

Its sad to read about how many people have lost their homes during this pandemic and waiting for unemployment to come through. I bet if they ever get another home they will do everything in their power to be able to keep that one!

I am grateful for the roof over my head. I thought of homeless people when our temps dropped suddenly here in Georgia. How cold it must be to be outside! Thankful for the blessings in my life. xx
