Today is Chocolate Covered Anything Day which is our opportunity to top everything we eat with chocolate. Indulge in chocolate covered waffles for breakfast, chocolate covered crepes for lunch, chocolate covered pretzels for a snack, and chocolate covered strawberries for dessert. You can also get creative and experiment with more like unusual dishes like beef tenderloin smothered in rosemary, chocolate and wine sauce.
There are many different types of chocolate that you can use to top your food: sweetened , unsweetened, bittersweet, semisweet, milk chocolate, white chocolate, dark chocolate, cocoa and more. Cocoa beans, the main ingredient in chocolate, were so valuable in the ancient Mayan and Aztec civilizations that they were used as currency to pay for commodities and taxes.
Cover your food in chocolate today and in spirit of the holiday season share some chocolate covered treats with friends and family. Enjoy !

I hadn’t planned on having anything with chocolate today, but I do have a box of chocolate covered cherries sitting on the table, so they will do for my dessert today!
On the menu for today is:
Slow Cooker Chicken with Rosemary and Mushrooms over Linquine
Makes 4 servings
1 cup chicken stock
2 1/2 tbsp. flour
1 cup sliced shallots
8 oz. sliced mushrooms
4 oz. fresh shiitake mushrooms
1/8 cup dry Marsala wine
2 tsp chopped fresh rosemary
8 boneless, skinless chicken thighs
3/4 tsp salt
1/2 tsp black pepper
8 oz. uncooked whole wheat linguine
2 tbsp. parsley leaves
Whisk stock and flour together in slow cooker until well blended. Place shallots, mushrooms, Marsala, and rosemary in slow cooker. Sprinkle chicken with salt and pepper; arrange the chicken in slow cooker, nesting it among the vegetables and liquid. Cover and cook on low until chicken is tender and sauce has thickened. About 4 hours.
Transfer chicken from slow cooker to a serving platter, reserving the cooking liquid and vegetables in the slow cooker. Transfer to a 2 quart saucepan; bring to a boil over medium high. Boil stirring occasionally, until sauce is reduced to 2 cups.
Cook the linguine to package directions, drain. Divide linguine among 4 bowls; serve the chicken over the pasta. Top with sauce, Sprinkle with parsley.
Serving size is 1/2 cup pasta, 2 chicken thighs, 1/4 cup sauce.
Swirling the stock and flour at the beginning is a pro tip for creating a thick sauce that moistens the final dish and helps all the ingredients come together.
It’s midweek and once again time for me to do grocery shopping and I made my weekly menu up for next week so I'll know what to get.
On the menu for next week is:
Monday - Broccoli Cheese Chowder
Wednesday- Quinoa Unstuffed Peppers
Friday - Baked Mac and Cheese
Weekend- Hungarian Beef Goulash

PRAYER REQUEST
Please join me in praying for DSIL’s mom. She has tested positive for Covoid 19 and is was in the hospital due to problems with her levels of oxygen. but is now at home with a visiting nurse to check on her.
May the dear Lord bless her with good health and healing, and may she soon be returned to normal.

Oh, I wish I'd thought to do a post about chocolate!
I suppose it was 7-8 years ago, Tom's DIL had a chocolate fountain going and of course, her little daughter got it all over both hands. Her 5 y/o brother remarked, "That's okay Audrey, I'll lick it all off."

My brother sent us a 2 pound box of See's candy for Christmas. I must confess that I ate the majority of the chocolate covered nuts ones :)
Prayers for DSIL's mom. "Funny" that another blog I follow her SIL's mom was in the hospital with Covid and low oxygen levels. Hoping for a quick recovery for your DSIL's mom.
