Today is Oatmeal Cookie Day which originated in England and evolved from the savory oatcake. In the Middle Ages, soldiers carried oatcakes with them in case they needed a quick boost of energy during battle. Although our modern day version is much sweeter, oatcakes and oatmeal cookies share many of the same ingredients, including spices, nuts, and raisins.
Oats are an excellent source of iron and fiber, which explains why oatmeal cookies are the healthiest type of cookie!
To celebrate today, make a batch of oatmeal cookies and enjoy!

I don’t bake many cookies anymore, but since these are supposed to be healthier, I thought I’d look for a recipe that I could make. I found one and it looks and sounds delicious. Not too sweet for me to enjoy!
Healthy Oatmeal Cookies
6 Tbsp. butter
1/2 cup Honey
1 1/2 tsp vanilla
1/2 cup unsweetened Applesauce
1/2 tsp orange Zest
1/2 cup flour
1/2 tsp. Baking Soda
1/2 tsp. Ground cinnamon
1 cup uncooked oats
Move the rack in the oven to the very bottom shelf, then preheat two 325 degrees.
In bowl whisk together flour, baking soda and cinnamon
In a separate bowl, cut the butter in 6 slices and microwave until melted. Add the honey, orange zest, vanilla and applesauce to the butter and stir with spoon until well combined.
Pour the flour mixture into the butter mixture and mix with spoon until well combined.
Add the oats to the batter and mix until well combined.
Scoop 2 Tbsp. worth of batter onto a baking sheet. Spread to 1/2 inch thick and shape of a cookie.
The cookie will spread very little while baking. Scoop the rest of batter on baking sheet, leaving 1 inch between each cookie.
Bake on bottom shelf for 10 to 12 minutes. Remove from the oven and let cool completely, then remove cookies from baking sheet with a spatula.
The orange zest can be omitted without issue, but the cookies won’t be as favorable.
A gluten flour is necessary in this recipe, or the cookies will crumble when you eat them. They are low carb and healthy by using honey instead of sugar.
We’re supposed to remain in the upper 30’s today for a high, so it will be a great day to turn the oven on.Winter is giving us a last Hah Rah!
