Today is National Poinsettia Day which is a very popular decoration during the holiday season. Although it is native to Mexico, 90 percent of all poinsettias are exported from the United States. The Aztecs considered poinsettias a symbol of purity because of their brilliant red color.
Joel Roberts Ponsett, the first U.S. ambassador to Mexico introduced this gorgeous flowers to the United States in the 1820’s . while visiting Taxco, Poinsett found the flowers growing on a hillside and sent some of them to his home in South Carolina. The flowers grew well in his greenhouse and Poinsett began distributing them. The name poinsettia soon became the accepted name of the flower in English speaking countries.
To celebrate this day, purchase a beautiful poinsettia plant for a friend or for yourself.

THOUGHT FOR TODAY
Poinsettia is the Brilliant Christmas plant that with a little love will bloom long after the Ho Ho Ho's have faded.
I don’t have a real poinsettia here at my house right now, but I do have some artificial ones. They are very bright and cheerful and add some badly needed color right now. That is what my pictures are of today. I do plan on getting a real one soon.
Other years, I’ve gotten them for gifts, but this year, since I’ve had no visitors, none have come my way yet.
Today is my day to cook something for the weekend. On the menu is:
Garlicky Chicken Dinner
Makes 8 servings
1 1/4 lbs red potatoes, quartered
4 carrots, cut into 1/2 inch slices
1 red onion, cut into thin wedges
1 tbsp. olive oil
6 garlic cloves, minced
1 tbsp thyme, devided
1 tsp pepper, divided
1 tsp. paprika
4 chicken drumsticks
4 bone in chicken thighs
1 lemon, sliced
1 pkg.5 oz. spinach
Preheat oven two 425 degrees. In a large bowl, combine potatoes, carrots, onion, oil, garlic, 1 tsp thyme, 3/4 tsp salt and 1/2 tsp pepper; toss to coat. Transfer to a baking pan coated with cooking spray.
In a small bowl, mix paprika, the remaining thyme, salt and pepper. Sprinkle chicken with the mixture, arrange over vegetables. Top with lemon slices. Roast until thermometer inserted in chicken reads 175 degrees and vegetables are just tender. 35 to 40 minutes.
Remove chicken to a serving platter, keep warm. Top vegetables with spinach. Roast until vegetables are tender and spinach is wilted. 5 to 10 minutes longer. Stir vegetables to combine; serve with chicken.
This is a one pan dinner and easy to make but will make plenty for two days, so there will be no cooking to do on Sunday.

Brighten up the winter days with a bright and cheery poinsettia.
When I think of poinsettias it always reminds me of the churches decorating with them at Christmas time. So festive! Another yummy recipe Ma! I think I'll make it with chicken breasts instead of thighs but cut the breasts in half to resemble the size of a thigh. Enjoy!

Even with the virus limiting attendance, I love how our church still decorates with poinsettia's -- given in memory of our loved ones. My mother, especially, loved having them grow so easily there in Florida.
Received a poinsettia from my cleaning lady and it is so pretty. Was sweet of her to gift me with it. Dinner sound good and easy.
