Today is Roots Day which is full of family functions and gatherings, so its the perfect time to celebrate your roots. Many people take their family history and ancestry for granted, and never take the time to learn about the struggles and triumphs of their ancestors and the history of their family name.
It’s our genealogy that makes us who we are today, so take time to sit down with your older relatives to talk to them about the past. You may hear some funny stories and learn a few things about your family that you never knew before.
To celebrate today, start to create a family tree.

My roots come from a long line of hard working people. They came to America with the hopes of a better world to live in and raise their families. On my mother’s side of the family they settled in a part Virginia which is now West Virginia. MY father’s side of the family came from Hungary and lived at first in New York and then to Ohio. They were listed as immigrants that came in through Paris Island So they have not been here as long as my maternal side of the family has been.
They all lived through the hard times of the great depression and I heard many stories of that from my parents. They lost everything they had at that time and had to start over again. They went from being moderately rich to having nothing. The things they endured are nothing any of us would want to go through.
I do love history and learning about my ancestors is one thing I’d like to do more of.
I still have a few older aunts and uncles living, but most of them never bothered to keep track of the family history, they were too busy just living their lives. It’s something we should never take for granted.
It’s mid week and I should be going grocery shopping but I really don’t need much other than maybe a half gallon of milk, so I’m opting out on the shopping today. The stores are very crowded and busy. I have enough in the pantry to see me through the rest of the week and into the next. Besides, I’m sure there will be lots of leftover Christmas goodies.
On the menu for Next week is:
Monday - Slow cooker scalloped potatoes and ham
Wednesday - Christmas eve Lasagna
Friday - Creamy Egg Strata
Weekend - Pork Roast and Sauerkraut for New Year’s.
On the menu for today is;
Chicken and Black Bean Quesadillas
Makes 4 servings
1 can 15 oz. Black beans drained
1 can 10 oz,, diced trinities and green chillies, undrained
1 pkg. 6 oz. ready to use chicken strips
1 tbsp. onion powder
1 cup shredded Cheddar cheese
1/2 cup shredded mozzarella cheese
8 whole wheat flour tortillas
2 tbsp. oil
Sour cream, salsa and quacamole, optional
In a large skillet combine beans, tomatoes, chicken, and onion powder. Bring to a boil. Reduce heat, simmer, uncovered about 6 minutes or until thickened.
In small bowl, combine the cheeses. Sprinkle half of cheese mixture over four tortillas. Layer with chicken mixture and remaining cheese mixture. Top with remaining tortillas.
In a large skillet over medium heat, cook quesadillas in 1 tablespoon oil for 1 to 2 minutes.on each side until cheese is melted, using additional oil as needed. Cut into wedges. Serve with sour cream, salsa and guacamole if desired.

Remember your roots and where you came from.
I think we owe a real debt to our ancestors' work ethic and perseverance. Thanks to one of mother's cousins, I've details of those on her side dating back to the great-greats. No such stories on my father's side, yet they were obviously fond of picture-taking. (*smile*)
How I wish I had asked my parents more questions! And rather than waiting to be asked, perhaps I should use some of this down time to chronicle bits and pieces of my own story.
Like Myra said, I sure wish I would have asked more questions. I have been able to find out very little about my ancestors and there's nobody left to ask now. Your menu sounds great Ma, enjoy!
Hubby tried to get into one of the local Wal-Marts and there were no parking spaces! I wonder if they were limiting how many were shopping in the store. Your menu for the week ahead sounds like another yummy one Ma!

I am very fortunate that my Mom was good at keeping records and between that and
Ancestry I even have the record of my Grandfather coming to Ellis Island from Sweden. I don't have much from the old countries (Sweden on my Mothers and Russia on my fathers). Loved that first saying, it is so true.
