Today is Go Caroling Day which is about singing a Christmas carol which is a song whose lyrics are on the theme of Christmas or the winter season in general. They are traditionally sung in the period immediately surrounding the holiday. Christmas carols may be regarded as a subset of the broader category of Christmas music.
Christmas carols and songs written in the U.S. range from Jingle Bells and O Little Town of Bethlehem to Away in a Manger and numerous others.
To celebrate today sing a your favorite Christmas carol.

One of my favorite memories of my time as a Scout leader, was when we went Christmas caroling to different nursing homes. Of course that is pretty much impossible now with all the restrictions on visiting there are, but the people used to love seeing the boys come in singing. You could see the happiness in their faces. The boys weren’t always into singing, but once they got started, they did a great job of it.
Caroling used to be much more popular than it is these days. Groups of people would go up and down the street singing carols for all and would stop in front of houses to entertain you for awhile. It was a gift to behold.
Today is my day to cook for the weekend and on the menu is:
Slow Cooker Chicken with Potatoes, Carrots and Herb Sauce
Makes 4 servings
1 1/4 cups 1/2 inch thick carrot slices
1 pound red potatoes, cut into eighths
1 1/4 cups sliced onions
1 tbsp. chopped fresh oregano
1 tbsp. garlic, chopped
3 tbsp. chopped parsley
1/4 tsp. salt
1/2 tsp black pepper
1 serving cooking spray
4 skinless chicken breasts
1 tbsp. olive oil
3/4 cup chicken stock
1/4 cup dry white wine, or apple juice
2 tbsp. flour
Place carrots, potatoes, onions, oregano, garlic, parsley and salt and pepper in slow cooker evenly coated with cooking spray.
Sprinkle the chicken with 1/2 tsp salt and 1/4 tsp pepper. Heat oil in a large nonstick skillet over medium high heat. Add the chicken to the skillet , meaty side down. and cook until well browned. Turn chicken over and cook 1 minute more. Then put it into the slow cooker on top the vegetables.
Whisk together stock, juice and flour. add the mixture to the skillet, bring to a boil, scraping to loosen any browned bits from the bottom. Pour the stock mixture over the chicken in the slow cooker. Cover and cook only until the chicken is cooked through, about 4 hours. Serve the chicken and vegetables with the sauce and sprinkle evenly with 1 tbsp.chopped parsley.
Serving size is 1 breast, 1 cup of vegetables and 1/4 cup of sauce.
This is will make more than enough for today and for Sunday dinner too

Another yummy recipe Ma! Tomorrow we are going to be making the garlicky chicken dinner one you posted a few weeks back. Good time of the year to run the oven here :)
Always fun to go caroling or to have people come and carol. Certainly can't do it at nursing homes this year but it could be fun just walking the streets where I live and sing Christmas carols with hubby :) Might do that :)

I was hoping to take the grand quads caroling on the porches of some neighbors and Kimmy and June who are just about as shut in as you can get. Alas, it will be after Christmas most likely when they can come.And I can't carry a tune in a bucket!! So no solos for me!
Another delicious weekend meal! When I was a child the little city I lived in would organize a caroling night. They decorated a flatbed truck and any kids in the city could ride on it. They would very slowly drive down every single street in the city while we sang Christmas carols. Ah, the good old days.
What great memories of caroling with the Scouts! I've never participated in anything like that, but have been singing Christmas carols to our pups. So far, they've not run away (LOL). Aren't slow-cooker meals the best? I think that appliance is my MVP.
Your little carolers are so sweet. One of my best memories of caroling was at a rest home several years ago. I would freeze some of those meals and then pop them out later for a treat.
