Today is Pepper Pot Day which is a thick spicy soup first created on December 29, 1777. During the Revolutionary War, the Continental Army experienced an exceptionally harsh winter in Valley Forge. The soldiers were low on food because the farmers in the area sold all their supplies to the British Army for cash rather than the week currency the Continental soldiers could offer.
Christopher Ludwick, the baker general of the Continental Army gathered whatever food he could find to feed the frail soldiers. The chef was able to find scapes of tripe, meat, and some peppercorn. He mixed the ingredients together with some other seasonings and created the hot spicy soup we now know as pepper pot. It became the soup that won the war.

I do love soup on a cold winter day and make it often. It's usually a meal for me, but on the menu for today is
Ham and Bean Casserole
This is very easy to make using leftover ham and baked beans from Christmas. I only had to add a couple cups of cubed baked ham to the baked beans I had leftover. I mixed the two together and heated it up in the oven to make this easy and quick dinner for tonight. I did add a little extra tomato sauce to them so they wouldn’t be too dry.
I love leftovers and can eat them again and again. Post 5 days though, out they go.
DSIL’s family met yesterday to decide on the funeral for his mom. There will be one. The funeral home they use provides plenty of safe distancing and they feel it will be very safe. I hope to attend and will send flowers from the whole family. As hard as it may be to keep a distance, I will wear my mask and use hand sanitizer and keep a safe distance from everyone. Giving air hugs only. My SIl is definitely a part of our family and I want to be there for him.
Much of the snow is melted here now and that is what the pictures are of today. Not much left except in places.
