Today is Barbie’s Birthday which celebrates an childhood icon that has been sparking imaginations for over six decades She was created by Ruth Handler, a business woman, mom and true pioneer of her time.
She made her debut on March 9th, 1959 at the New York Toy Fair. At first toy buyers were skeptical at how different she was from the typical toddler and baby dolls of the time. She quickly proved them wrong, and has taken the world by storm ever since.
Barbie is well know for her wide variety of careers, over 200 and counting. She helps inspire children to believe in themselves and never doubt their potential.
Celebrate today by encouraging children or grandchildren of your own.

Years ago my daughter loved Barbie and she had a Barbie doll house and car. Many hours of fun were had with her Barbie dolls.
I’m thankful for all those wonderful memories and so will celebrate today. Encouraging children is one thing I love to do. All of mine pursued different careers and I’ve always encouraged them to be the best of who and what they are. The same goes for my grandchildren who are all very talented in their own way. I encourage them to love what they do and do what they love.
It’s my day to cook up something new here and on the menu today is :
One Pot Chicken and Brocolli Pasta
Makes 4 servings
2 cups chicken broth
2 cups water
8 oz. whole grand small shell pasta
2 Tbsp olive oil
1/2 Tbsp Worcestershire sauce
1 Tbsp. tomato paste
3 cloves garlic, minced
1 tsp pepper
1/4 tsp salt
12 oz. broccoli Florets, cut into bite size pieces
2 cups shredded cooked chicken breasts
3/4 cup plain Greek Yogurt
3./4 cup Paremesan cheese, divided
2 Tbsp chopped fresh dill
Combine broth, water, pasta, oil, Worcestershire , tomato paste, garlic, pepper and salt in a large pot or high sided skillet . Bring to a boil over high heat, stirring occasionally. Add broccoli; cook, stirring often to prevent pasta from sticking, until pasta is al dente, the broccoli is tender and the sauce is creamy.
Remove from heat, and stir in chicken, yogurt, Parmesan and dill.
I made several substitutions in the recipe, I didn’t have plain yogurt so used sour cream, I didn’t have shredded cooked chicken so used canned chicken instead. I also didn’t have fresh dill so used dried and cut the amount down. I try to use what I have on hand and not waste what I do have. Waste not want not is my motto.
I also made up my menu for next week :
Monday- Broccoli, Beaf and Tater Tot Hotdish
Wednesday - Slow Cooker Corned Beef and Cabbage
Friday - Tuna Casserole with Peas
Weekend - Rubin Casserole
I have to go for Lab work today which means a lot of walking for me, more than what I’m used to. Thankfully it’s to be a partly sunny day and a bit warmer in the 40’s. My doctor will be determine whether ore not the new meds are doing what they are supposed to. He’ll call me when he finds out. I don’t have to go to his office again for another 4 months.
I don’t have any Barbie Doll pictures to share but do have a lot of my daughter so that’s who you are seeing today. I’m very proud of all her many talents too!

Be an encourager today !
I love that you encouraged each of your children to explore their own interests, passions. I've even heard of twins whose parents and educators treated them like they shared only own mind.
The only real memory I have of 'Barbie' was trying to trim her hair ... and would up giving her a butch cut, fit for boot camp.
You have a beautiful family. Barbie? we weren't introduced until Sherry got her girl, a grand daughter. LOL
Yes, thanks for the prayers, we join you, it is a rough world we are in at present. Those in harm's way need out prayers. The recipe 'smelled good', ;-)

Barbie! It was so exciting to get mine. She had red bouffant hair, and had heavy black eyelashes. AND she wore a black sequin evening slinky dress, with a red rose on it. Thanks for the memory.
