Today is Eggsbit Day which celebrates the art exhibits of beautifully decorated eggs that takes place each spring all around the world. At the annual Eggsbit in Phillipsburg, New Jersy, judges from the National Egg Art Guild award prizes for the most original, the most beautiful, and the most humorous egg designs.
People have been decorating eggs for centuries. One of the traditional forms of this ancient art method is the wax resist method, which is popular in eastern Europe. Artist use a stylus to create a design on the egg with melted beeswax before dipping it in the dye. They wax and repeat the process with different colored dyes to create intricate patterns .
In honor of the day, try decorating some eggs and perhaps invite some friends to join in the fun.

These days, I don’t decorate many eggs as the grandkids do such a good job of it and I get to enjoy some of theirs. I do have some old wooden eggs that were painted by artists in Hungary. A friend of mine gave them to me many years ago. I have also painted eggs and given them away as gifts. The pictures today are of some of the grands decorating eggs.
It’s the beginning of a new week, and time for me to cook up something new here. On the menu for today is:
Crustless Spinach Quiche
Makes 8 servings
1 cup chopped onion
1 cup allow fresh mushrooms
1 Tbsp canola oil
1 10 oz. pkg frozen chopped spinach, thawed and drained.
2/3 cup finely chopped fully cooked ham
5 eggs
3 cups shredded Muenster or Montery Jack cheese.
1/8 tsp pepper
In large skillet saute onion and mushrooms in oil until tender. Add spinach and ham, cook and stir until the excess moisture is evaporated. Cool slightly. Beat eggs, add cheese and mix well. Stir in spinach mixture and pepper. blend well. Spread evenly into a greased 9 inch pie plate or quiche dish. Bake at 350 degrees.for 45 minutes or until a knife inserted in the center comes out clean.
I only have shredded Cheddar cheese so that is what I’ll be using today and I will be spraying my pie plate with baking spray to make sure it doesn’t stick.
Some mixed fruit will be my side dish for this meal. Yum

Your recipe looks great. I've always got eggs in the refrigerator and my lunch today is one of my favorites, French toast. It's perfect for a cold day. Take care!

PS - Did you watch the Oscars last night? I actually tuned in for a couple hours, but fell asleep before the grand finale.
