Today is Chocolate Caramel Day which celebrates the union of chocolate and caramel that is the most popular and decadent flavor combinations. These two ingredients appear in countless candy bars, ice cream flavors, confections, and desserts.
Milton Hershey began his career at a caramel company. In the late 1800’s he began experimenting with ways to improve caramel candy and found some German built machines for manufacturing chocolate. His attention would eventually shift completely to chocolate but Hershey’s first product was a chocolate covered caramel.
To celebrate today enjoy some of your favorite goodies made with chocolate and caramel.

I love the mixture of chocolate and caramel and will be celebrating here today by eating some Girl Scout cookies called Samoas. They are crisp cookies with caramel, coconut and dark chocolate stripes.
I also love Sundaes with caramel and chocolate sauce over it and sprinkled with pecans. They are called Turtle Sundaes.
There are many chocolates that come with caramel coated in chocolate too. It ’s a favorite of mine.
For today, I’ll be cooking up something new to have on hand for the weekend. And on the menu is:
Rubin Casserole
Makes 6 servings
3 Tbsp. olive oil, divided
1 10 oz, package coleslaw mix , very finely sliced
1 cup chopped yellow onion
1/8 tsp. salt
2 Tbsp, cider vinegar
1 1/4 cups shredded Swiss cheese
1 Tbsp. chopped kosher dill pickle
1/2 lb. sliced deli turkey, coarsely chopped
1/3 cup mayonnaise
2 Tbsp. ketchup
3 slices seeded rye bread, torn into pieces
Preheat oven to 350 degrees. Coat a baking dish with cooking spray. Heat 1 Tbsp. oil in large non stick skillet over miedium high heat. Add cabbage, onion and salt. Cook stirring often, until until cabbage wilts and cabbage and onion begin to brown, about 5 minutes. Stir in vinegar and remove from heat. Transfer mixture to the prepared baking dish.
Sprinkle one third of cheese evenly over the cabbage mixture, sprinkle with pickle then turkey then another layer of the cheese. Stir together mayonaise and ketchup in a small bowl, spread over top of cheese. Sprinkle with remaining cheese. Toss the breadcrumbs and remaining 2 Tbsp. oil in a small oil in a small bowl; sprinkle over the top cheese layer.
Bake the casserole until it’s hot thoughout and the cheese is melted.
We are having a rainy day here so it’s time to make our own sunshine !

Yes, even if you are not a chocoholic, Chocolate and caramel IS GOOD! TAste is also a BLESSING, Sherry hd no taste for anything just a few weeks ago and she ws miserable...

That's a good idea ... substituting turkey in the casserole dish!
The only caramel I recall were those sweet little squares, individually wrapped. If memory serves, they came in light and dark varieties; my mother would buy them for baking, but I'd try and filch one or two every time I had the chance. Now I'm wondering if they're still sold that way; I'll have to remember and look.
