Today is National Cereal Day which celebrates the most popular breakfast food in America. Up until the 1860’s most people ate eggs, bacon and sausage every morning. Cereal provided a healthier alternative at the end of the 19th century.
The invention of one of the most famous brands of cereal was an accident. In 1877 two brothers named John Harvey Kellog and Will Keith Kellog were experimenting with food made from boiled wheat. They left a batch out overnight and returned to find it stale. Instead of throwing it away, they rolled it out and discovered that the wheat berry formed its own flakes. They tried the same process with corn, and created the first dry breakfast cereal, which we now know as Kelloggs’s Corn Flakes.
Many people start their day with a bowl of cereal. Wholegrain cereals are am excellent source of fiber, iron, and B vitamins.
To celebrate today, have a bowl of your favorite brand.

My mornings often start off with a cup of coffee and a couple of donuts but by 10:00 or so I’m hungery so I have a bowl of cereal for breakfast . It’s quick and easy and healthy too. I like to have a banana every day and I slice it up in my cereal. Rice Krispies is a favorite of mine. Snap, Kracle and Pop. It reminds me of the way I sound when I get up in the morning when my joints are stiff. Ha!
I keep a variety of cereal on hand so I always have something different to have. I also like hot cereal like oatmeal and Cream of Wheat on cold days.
It’s my day to cook up something new and on the menu is :
Taco Salad
Makes 4 servings
1/2 cup prepared salsa
1/4 cup sour cream
1 tsp. vegetable oil
1 chopped onion
3 cloves garlic, minced
1 lb lean ground turkey
2 tomatoes, diced
1 14 oz. Kidney beans
2 tsp ground cumin
2 tsp. chili powder
1/4 chopped cilantro
2 cups shredded romaine lettuce
1/2 cup shredded sharp Cheddar Cheese
Combine salsa and sour cream in a large bowl.
Heat oil in a large skillet over medium heat. Add onion and garlic and stir often until softened. Add turkey and cook, stirring often and crumbling with a wooden spoon until cooked through and no longer pink. Add tomatoes, beans, cumin and chili powder. Cook, stirring until tomatoes begin breaking down. Remove from heat, stir in cilantro and 1/4 cup of salsa mixture.
Add lettuce to remaining salsa mixture in the bowl, toss to coat. To serve, divide the lettuce among 4 plates. Top with the turkey mixture and sprinkle with cheddar cheese.
This dinner is a favorite of mine and I’ll have leftover to eat tomorrow on Taco Tuesday !
The weather has once again turned colder. We’re headed back in the deep freeze again which is not surprising for the month of March. It’ll continue like this until Spring finally moves north to us once again.

Enjoy a healthy breakfast today !
Gosh, I've not enjoyed a bowl of cereal in years! If I had to choose, however, it would be GrapeNuts. Now I wonder if it would still taste as good as I remember.
Thanks for the education on cereal. Our breakfast varies from dry cereal to oats to eggs etc. Great thought of the day. And yes we will remember prayers for those in harm's way.
