Today is Make Up Your Own Holiday Day which is something we all can do. If you’ve been following the daily reason to celebrate, you know how many interesting and unique holidays there are in the world.
Establishing an official holiday is not an easy process. For example, in the 1800’s, Sara Josepha Hale decided our nation should observe a national day of thanks. She wrote countless letters to politicians, governors, and the president. In 1863 President Abraham Lincoln agreed to Hales proposal, but Thanksgiving did not become an official national holiday until 1941.
To celebrate today, come up with your own idea for a holiday.

Kindness, tolerance, integrity, modesty, generosity - these are the attributes that events permit us. They are our holiday moods and we are as proud of them as the fine clothes we have hung away to wear on occasions.

There are so many reasons to celebrate each day, I wouldn’t know where to start on an idea for a holiday. I already mentioned how I celebrate each and every day. And I always show you what I’m thankful for every day. There is always a reason to be thankful and I’m glad we have Thanksgiving Day to celebrate. One thing stands out more than others, I’m thankful to be living in the United States of America. The word United stands out for me. We all have our differences but we can agree to disagree. Having a United front means a lot. Together we stand United or alone we shall fail.
This is the day I cook for the weekend. Having leftovers on Sunday so that I can just rest and relax and on the menu today is:
Garden Chicken Cacciatore
Makes 12 servings
12 boneless, skinless chicken thighs
2 green peppers, chopped
1 can diced tomatoes with basil, oregano, and garlic, undrained
1 6oz can tomato paste
1 onion, chopped
1/2 cup chicken broth
1/4 cup dry red wine or additional broth
3 cloves garlic, minced
1/4 tsp. salt
1/8 tsp. pepper
2 Tbsp. cornstarch
2 Tbsp cold water
Minced fresh parsley, optional
Place chicken in a slow cooker . In a medium bowl, combine green peppers, tomatoes, tomato paste, broth, wine garlic, salt and pepper. Pour over chicken. Cook, covered on low for 8 hours until chicken is tender.
In a small bowL mix cornstarch and water until smooth. Gradually stir into slow cooker . Cook, covered on high 30 minutes more or until sauce is thickened. If desired sprinkle with parsley before serving
I’ll only make 1/2 this recipe as it makes enough for a large group. Perhaps something I’d make for the whole family. I’ll be serving mine over some cooked fettuccine .
Yesterday, I ran out of water for my coffee maker. It says to use only purified water and I was out of that. Can’t do without my coffee in the morning. And I had to pick up my prescription. It’s a cloudy and windy today with a chance of flurries or snow showers possible. So, I hope to be staying in and keeping warm.

ADVICE FOR TODAY
I think holiday spirit can mean many things and I think holiday is just sort of your state of happiness during the holidays. You could say the same about Spring spirit or Sumer spirit.

Your DS#6 has such a good-looking family! I've already been to the grocery, but will add chicken thighs to my next list to try this recipe. Normally, I buy breasts but the thighs are Tom's favorite part. Happy Saturday!
