ON THE BRIGHT SIDE
WEDNESDAY, MARCH 23RD, 2022
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is National Chip and Dip Day which celebrates an iconic American party snack. Whether you prefer tortilla chips, potato chips or corn chips, there are dozens of dips to choose from.
Humans have dipping their food into sweet and savory sauces for centuries. Some of the earliest dips were hummus and olive oil, which originated in the Mediterranean region.and are still popular today. Salsas and dips made with sour cream became popular in the U.S. in the 1940’s. After the Great Depression, many middle class families found themselves without a maid for the first time. Chips and dip became the go to party dish because it was so simple to prepare.
To celebrate today, enjoy your favorite dips and ships
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
Dips are the perfect appetizer for any outdoor party! They are super easy to make and equally delicious!
Rachel Hollis
Not only do I enjoy tortilla chips and salsa, I love potato chips and french onion dip. I have both on hand so I will definitely be celebrating today. I have also found that Pretzels dipped in french onion dip are delicious too and had some last night when watching T.V.
Today is time for me to make up a new menu for next week and here it is:
Monday - Crustless Spinach Quiche
Wednesday-Chicken Broccoli Casserole
Friday -Creamy Mushroom, Spinach Pasta
Weekend - Hungarian Goulash
On the menu for today besides chips and dip for a snack is:
Bacon Garlic Chicken
Makes 4 servings
4 boneless, skinless chicken breast halves
1/4 tso salt
1/2 tsp pepper
1/4 cup flour
3 bacon strips, chopped
1 Tbsp butter
4 garlic cloves, thinly sliced
3/4 tsp. dried rosemary, crushed
1/8 tsp. chrushed red pepper flakes
1 cup chicken broth
1 Tbsp lemon juice
Pound chicken with a meat mallet to 1/2 inch thickness, sprinkle with salt and pepper. Lightly coat both sides with flour, shake off excess.
In a nonstick skillet, cook bacon over medium high heat until crisp, stirring occasionally. With a slotted spoon, remove bacon to paper towels, reserve 1 tsp. of drippings .
In same pan heat butter and drippings over medium heat. Add chicken, cook until no longer pink. Remove from pan.
Add garlic, rosemary and pepper flakes to pan, cook and stir until garlic begins to color. Stir in broth and lemon juice, bring to a boil, stirring to loosen browned bits from pan. Cook until slightly thickened.
Return chicken and bacon to pan, heat though turning chicken a few times to coat. I’ll be serving this with a side of some buttered noodles and some asparagus for dinner today.
I don’t need to shop this week, I got what I needed on Monday and have well stocked cupboards and fridge. Good thing as it’s supposed to be another wet stormy day.
On the bright side I’m going with DD and her family tonight to their son’s Spring concert. That should cheer me up!
I hope you all have a WONDERFUL Wednesday!

Enter into His courts with thanksgiving — and in His presence is fullness of Joy!
Please pray for God's protection of
our troops and HIS wisdom for their
commanders.
Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters and EMT’s.
We ask this through Christ our Lord.
Amen
GOD BLESS YOU ALL!

It's a good day to have some chips and dip!
Imma tortilla and salsa type guy, Sherry is chip and dip. Funny we both were around before chip and dip became popular. In our youth it was just coke/pepsi and chips.

I could make a whole meal of tortilla chips and French Onion dip! Unfortunately, we're out of town for a few days so I'll have to exercise self-discipline. Have fun at your grandson's concert!
