Today is National Cheese Doodle Day which celebrates a delicious snack food made with cornmeal that has been puffed. baked, and coated with cheddar cheese. Morrie Yohai invented the cheese doodle in the 1940’s . After serving as a Marine in WWII, he returned to his home in the Bronx and took over the family business, a snack food company called Old London Foods.
During the 1960’s, Wise Foods, Inc. acquired the company and cheese doodles became part of the potato chip division. Today, cheese doodles are one of Wise’s strongest brands. The company produces over 15 million pounds of cheese doodles each year. That’s enough to fill 36 Olympic sized swimming pools.
To celebrate today, pick up a bag of cheese doodles to enjoy at home.

I am definitely a snacker and I do love cheese doodles. They are very cheesy and I usually wind up with orange fingers when I eat them. I have some here to enjoy so I will be celebrating !
Today is my day to cook for the weekend and on the menu is:
Pork Chops with Creamy Mushroom Sauce
Makes 4 servings
4 bone in pork chops, trimmed
1/2 tsp salt, divided
1/2 tsp. pepper
3 Tbsp. olive oil, divided
1/2 cup minced shallots
8 oz.sliced mushrooms
1/2 cup dry white wine, or apple juice
1/2 cup half and half
1/2 cup chopped fresh herbs, such as chives, tarragon, and or parsley
Sprinkle pork chops with 1/4 tsp. salt and pepper. Heat 1 Tbsp. oil in a large skillet, preferably cast iron, over medium high heat . Reduce the heat to medium and add chops. turning once until cooked through. Remove to a plate and tent with foil.
Add the remaining oil to the pan. Add shallots and mushrooms and cook, stirring frequently until the mushrooms are browned.
Add wine or juice and the remaining salt. Cook stirring up any brown bits until the liquid is mostly evaporated. Stir in half and half and herbs. Cook until bubbling . Serve with the chops and some mashed potatoes.
Sweet potatoes would also be a good side to have with pork chops. And I always have a side of applesauce too.
It’s supposed to be another warm day here with temps on the 60’s but very windy. The March winds are blowing Spring our way!

I do love a cheesy snack !
Must admit, I cannot be trusted around an open bag of Cheese Doodles.
We're having pork chops ourselves -- done in the slow cooker w/ brown gravy and Ranch mix sprinkles and covered with cream of chicken soup. Life is good!
