ON THE BRIGHT SIDE
FRIDAY, MARCH 25TH, 2022
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a special occasion!

Today is the Old New Year’s Day, which celebrates a date that was changed in 1582 when the Gregorian calendar was created. Many choose to ignore it for several hundred years. Instead they used Annunciation Style dating which recognized the Feast of the Annunciation as New Year’s Day.
While now many have chosen to Observe The New, New Year’s Day, Many Eastern Christian Orthodox families still celebrate the Old New Year’s Day.with a nostalgic traditional family meal with music and drinking.
To celebrate today, plan a lovely family dinner at home. Happy Old New Year’s Day!
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
Today is a mystery; Today is a gift. That is why it is called the present.
Eleanor Roosevelt
I choose to celebrate New Year’s Day on January 1st., the new, New Years Day. Still I try to enjoy and celebrate every day, so there will still be some celebration going on here today!
More and more I’ve come to realize just how special each day is and rejoice in each new day. What a joy it is to wake up every morning and begin a new day!
Each day is a gift. We don’t know what tomorrow may bring, Yesterday is gone and we only have today !’
I always try to fix a meatless meal on Fridays and on the menu today is:
Mushroom Melts
Makes 4 servings
2 Tbsp. olive oil
2 Tbsp chopped shallots
1 8 oz. pkg muchrooms, thinly sliced
1 tsp. chopped fresh thyme
2 Tbsp. balsamic vinegar
8 thin slices rye bread
2 Tbsp. butter softened
4 slices Swiss Cheese
1/2 cup shredded Gruyere cheese
Preheat oven to 200 degrees. Heat oil in large nonstick skillet over medium high heat. Add shallots and cook, stirring often until softened. Add mushrooms and thyme. Cook stirring occasionally, until the mushrooms softened and begin to brown. . Add vinegar, cook, stirring often, until mostly evaporated. Transfer the mushroom mixture to a bowl and set aside.
Coat one side of each bread slice evenly with butter and set 4 slices aside. Place the remaining slices, coated sides down on a cutting board. Top each with one slice of swiss cheese. 2 2/3 Tbsp.. mushroom mixture, and 2 Tbsp.Gruyere. Top with remaining bread slices, coated sides up.
Wipe skillet clean and heat over medium heat. Add 2 sandwiches; cook until bottom side is crispy and browned. Carefully turn over and continue to cook until cheese has completely melted. Alternately, you could heat a panini press to medium . Place 2 sandwiches on the cooking grates and close the press. Cook until both sides are brown and crisp and the cheese is melted. Remove and keep warm in the oven until serving Repeat with remaining sandwiches.
I didn’t have shallots so used green onions instead and I had only the Swiss cheese so used only that . I don’t have a panini press so will cook mine in the skillet. It’s a great sandwich and something new to me. Much different from the usual grilled cheese.
Today’s pictures are of a walk I took around our community in 2020. Little did I know that in 2022 I would no longer be able to do this. We’ve got to enjoy each day while we have it.
I hope you all have a FASTASTIC Friday!

Enter into His courts with thanksgiving — and in His presence is fullness of Joy!
Please pray for God's protection of
our troops and HIS wisdom for their
commanders.
Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters and EMT’s.
We ask this through Christ our Lord.
Amen
GOD BLESS YOU ALL!

Life is such a gift. Celebrate every day !
We always enjoy visiting, today I don't feel too much like commenting, so I am canning my comment, and pasting after I read.
I appreciate your patience.
jack with Sherry watching LOL she reads but will not comment. LOL I think that makes her a lurker! ;-) But a sweet one...
Yum! I'm thinking that mushroom melt, cut up in smaller sizes, would make an awesome appetizer. Who doesn't like Gruyere? (I can't pronounce it, but I LIKE it.)
I never heard of Old New Years Day before. Now I'm chuckling, because I spotted my Auld Lang Syne cup this morning and thought, "I really should put that away." Not so fast!
