I’ve had many days that it seemed everything I did was wrong and I just wanted to quit. So I think its good to have a day like this to booster our self confidence. We are only as good as we think we are, so be good to yourself today and keep only positive thoughts flowing. You can do it, if you think you can.
Today is my day to make up a new menu for next week so I can make my shopping list for this week. On the menu for next week is:
Monday - Open face Reubens
Wednesday - Bacon Garlic Chicken
Friday - Mushroom Melts
Weekend - Garden Chicken Cacciatore
On the menu for today is :
Slow Cooker Corned Beef and Cabbage
Makes 8 servings
1 onion cut into wedges
4 red potatoes, quartered
1 lb baby carrots
3 cups water
3 cloves garlic, minced
1 bay leaf
2 Tbsp. Sugar
2 Tbsp. cider vinegar
1/2 tsp. pepper
1 corn beef brisket with spice packet, 2 to 3 lbs cut in half
1 head of cabbage, cut into wedges
Place the onion, potatoes and carrots in a slow cooker . Combine the water, garlic, bay leaf, sugar, vinegar, pepper and contents of spice packet: pour over vegetables. Top with brisket and cabbage.
Cover and cook on low for 8 hours or until meat and vegetables . is tender. Discard bayleaf before serving.
I’m making this today in preparation for St Patrick’s Day tomorrow. I love this dish and will enjoy the leftovers too.
It’s going to be a warm St. Patrick’s Day here and it will be a perfect day to enjoy a parade. I’ll be wearing my green and watching it on TV. There is no local parade to attend.
The pictures today are of a corned beef brisket I made a few years ago. And I used the leftovers to make a rubin sandwich which is one of my favorites. DD said she was making a brisket just so she could make Rubin sandwiches and wasn’t cooking any cabbage with hers, but I like the whole dinner too.

Everyone is a little bit Irish on St. Patrick's Day !
Even at 8-something in the morning, your photos have my mouth watering! I'm not one to ever turn down a good Reuben, but have never tried making corned beef and cabbage. Probably it's best I order one serving from a restaurant. That way if I don't like it, I won't have to throw out a whole batch. (LOL)
PS - I was thinking of you last night during The Bachelor. My take-away: (1) Clayton's a spoiled brat and (2) I love and admire how Gabby and Rachel support one another. Oh! and #3? Papa Tony cracked me up; wouldn't want to be Clayton. LOL.
I agree with Myra, hunger making food shots.. You said: ..... You can do it, if you think you can. ....... Situations lately put this to the test, and I still believe it.
