Decide to be happy today, to live with what is yours – your family, your business, your job, your luck. If you can’t have what you like, maybe you can like what you have.
Just for today, be kind, cheerful, agreeable, responsive, caring, and understanding. Be your best, dress your best, talk softly, and look for the bright side of things. Praise people for what they do and do not criticize them for what they cannot do. If someone does something stupid, forgive and forget. After all, it’s just for one day.
Who knows, it might turn out to be a nice day.

I'm looking out the window and the day is drab and dreary, And I'm trying to console myself by thinking something cheery I know it's simply horrible to get in such a slump And I also know it's up to me to get across the hump And I realize I'm selfish to mention this to you For, gee, you might be feeling a little 'low-down' too but often when I feel like this I tell myself it's true That I am not the only one who feels 'low-down and blue' And just knowing there are others who feel the way I do Renews my sinking spirit and keeps me smiling through and know that it's natural to take a 'spirit-dive' Provides the spunk and courage to hang on and survive And while there are a lot of moods that we can drive away by looking on the BRIGHT SIDE in all we do and say, There also is a loneliness that God meant us to feel But, gee, it sure is mighty hard to know which one is real And I'd hate to be a 'sad sack' who never saw the sun And just complained that every day was such a dreary one. But I know that all the dark days are just part of God's plan We should accept them graciously and do the best we can... So I'll just keep on trying for I know it's 'Gospel true' there never was a cloud so dark the sun could not shine through!

I send this little letter out each morning to all my family and friends and even to a few people that I've never met. Many of them send it on to others too. So in order to make it available to more people I post the 'brighter side' of the news here each day in this journal. The letter began as an effort to keep in touch with my family as they are spread out in all directions. My family, friends and God are the most important things in my life. Today is:Johnny Appleseed Day which was created to celebrate Johnny Appleseed for introducing apple trees to many parts of the United States. Make sure to incorporate apples into your menu today.
John Chapnabm known as Johnny Appleseed was an American nurseryman traveling west. Throughout his journey he planted apple seeds, creating apple trees in many states such as Pennsyvania, Ohio, Indiana, Illinois and West Virginia. Johnny was also know for his generosity, love for animals and religion and his preaching. This national holiday is celebrated on March 11th, which makes the approximate date of his death. He is also celebrated on September 26th as well, the date of his birth.
Honor this American legend by enjoying an apple, a caramel apple, applesauce, or apple cider. Bake an apple crisp or apple pie for dessert or plant your own apple tree!

THOUGHT FOR TODAY
This time of year we are looking forward to seeing apple trees blossom. But the only pictures I have are of in the Autumn when we harvest apples.
I always keep apples on hand. I love them in snacks and in cooking. I also keep apple cider on hand as long as I can. It’s not aways available. I like to make my own apple sauce. It tastes so much better than what you can buy. It’s easy and doen’t take a lot of time. I simply peal and slice up some apples and cook them on the stove top mixing in a little sugar until they fall apart. They are good as a snack with peanut butter or caramel sauce too.
They say an apple a day keeps the doctor away. They are very healthy for us. Good tasting and good for us too.So I will definitely celebrate today !
Today would have also been DDH’s birthday had he lived he would be 80 years old today, but he died when he was only 50 years ald. It is hard to believe that was 30 years ago. He was the love of my life, my children’s father and he is very missed still today. I’ll be remembering him today and lighting my birthday candle.
Today is my day to cook and on the menu is:
Linquine all Vongole (with clams)
Makes 8 servings
1/4 cup olive oil
2 Tbsp. butter
8 cloves garlic, minced
6 scallions, sliced
4, 10 0z. cans clams and their juice
1, 28 oz. can whole peeled tomatoes with their juice
3/4 cup dry white wine, or apple juice
1/4 cup chopped fresh parsley
1 1/2 tsp crushed red pepper
1/2 tsp ground pepper
1 package whole wheat linguine
Heat oil and butter in a large pan over medium high heat. Add garlic and scallions, cook stirring frequently, until soft. Add clams and tomatoes , both with their juice and wine or apple juice, whichever you prefer. Stir occassionally and break up the tomatoes until reduced by one third. Add parsley, crushed red pepper and pepper. Cook stirring for 3 minutes more.
Meanwhile cook pasta according to directions for al dente. Drain.
Add pasta to sauce and toss gently.
I usually substitute the wine with apple juice because I rarely have wine on hand, and I used diced tomatoes instead of whole ones. I didn’t have fresh parsley either so used dried. And I don’t like a lot of crushed red pepper so I used half the amount, 3/4 tsp.
I also cut the recipe in half as it makes so much. I’ve never made this recipe before but adapted it to my tastes.
Our temps are slowly going down. Tomorrow we are supposed to be in the 20s and we will get some snow , but on the bright side Sunday will be in the 40’s. Our roller coaster weather continues.

Tom loves it, but may only eat 1-2 of those little containers every couple of weeks. My mother always swore by putting a teaspoon of apple cider vinegar in her water bottle every morning -- she'd read something about it helping stave off dementia. Unfortunately, that wasn't the case, but I'm sure it has good properties.
I am a supporter of apples. I also like to make apple sauce when I keep apples too long. I will seldom eat an apple that doesn't 'crack' when I bite into it. So if I keep them until they get soft, we get some GOOD apple sauce. So true about the crab apple seed and what you get. Love from down this way. sherry & jack
