Today is the International Day of Forests which was initiated in the late 1970’s by the Food and Agriculture Organization; whereas the United Nations General Assembly adopted a resolution on December 21, 2012, which declared March 21 as the International Day of Forests. It is held annually to raise awareness of the importance of forests to people.
A forest is a plant formation made up mainly of trees and such a large area covered that it can develop a characteristic of a forest climate. Forests cover about 31 percent of global land area. On Internation Day of Forests the vital role forests play in poverty eradication, environmental sustainability and food security can be discussed internationally.

There is no doubt I’ll be celebrating this day. The trees produce oxygen that we all need to live. Many forests have been cut down without any new trees to replace them. We need to replace trees so we can all have the oxygen we need to live.
I don’t live in a forest, but I’m blessed to have a large Oak tree in my yard. It provides shade and shelter for many animals. I love the shade it provides, but I’m not always happy about the clean up I have to do here in my yard. Spring is a major time for me to get that done. There are still branches and leaves in my yard that need to be cleared away before any grass can be cut. I had hoped to get some of that done, but decided I need to wait for my helpers to do the job. It’s a backbreaking job for me. I can do little to get this job done. Good thing the grass isn’t growing yet.
Today is my day to cook up something new to eat and to do that I’ll be using some leftovers.
On the menu for today is
Open face Reubens
Makes 4 servings
4 slices pumpernickel or dark rye bread, toasted
6 oz. thinly sliced corned beef
4 slices Swiss cheese
5 cups packaged shredded cabbage with carrot, coleslaw mix
1 Tbsp. water
1/2 tsp caraway seed, optional
2 Tbsp.mayonaise
1 Tbsp. cider vinegar
Preheat broiler. Place bread slices on a large baking sheet. Broil 5 inches from heat for about 3 minutes or until toasted, turning once.
Arrange beef on bread slices. Top with cheese. Broil about 2 minutes more until cheese is melted. Meanwhile heat a large skillet over medium heat. Add coleslaw mix, the water, and if using, the caraway seeds to the skillet. Cover and cook until cabbage is wilted, stirring once or twice. Remover from heat . Stir in mayo and cider vinegar.
Soon cabbage mixture over sandwiches, serve open face.
To make for easier clean up it’s best to cover your baking sheet with foil before toasting the bread. The original recipe called for roast beef not corned beef, but I had a lot on hand so I used that. You could also use sauerkraut instead of the coleslaw mixture.
I managed to have a very restful Sunday so I’m ready to get busy today. There is lots to do as I want to pick up a few things at the store in case I don’t have a car to go shopping on Wednesday. I’m taking it into the garage tomorrow.
It’s supposed to be a partly cloudy day here and in the 60’s so it will be a good day to get out and about.

There are thousands of acorns that fall from my Oak tree. If they all grew into a tree, I'd live in a forest for sure.
We've got spring weather today and I hope to get to Central Park, the closest I get to a forest in my little world. Have a great day!
Forests seem to bring out the best in many people. I was walking our 'twins' once on some wooded property once and one looked up at me and said, "I love walking in the forest, Grandpa!" They weren't quite 4 yrs old. They still have a great vocabulary.
I too appreciate woodlands and forests they are one of God's beauties in life.

It’s a chilly rainy day here at the ranch! Yesterday we worked in the garden and I had meant to plant peas and onions and carrots today along with some bulbs - but instead I’m painting. I did a canvas of Louis Dean watering the garden from a photo I took last summer. I never could get his face right or even ON and I have now given up! He will remain faceless and I’m calling the painting done and will take it home with me and hang it up just like it is!
I love forests….my very most favorite is Muir Woods in California….
Your sandwich sounds delicious! Poor Louis Dean refuses to eat raw cabbage! Silly man! I planted an entire row of cabbage yesterday!!!
I still love walking in forests. So spoiled by my hometown's abundance of ponderosa pines and aspen! Almost every part of our nation has some pretty scenery, but after living in the Land of Kitty Litter (Arizona), I'm mighty happy to be back where the pines grow tall.
