Decide to be happy today, to live with what is yours – your family, your business, your job, your luck. If you can’t have what you like, maybe you can like what you have.
Just for today, be kind, cheerful, agreeable, responsive, caring, and understanding. Be your best, dress your best, talk softly, and look for the bright side of things. Praise people for what they do and do not criticize them for what they cannot do. If someone does something stupid, forgive and forget. After all, it’s just for one day.
Who knows, it might turn out to be a nice day.

I'm looking out the window and the day is drab and dreary, And I'm trying to console myself by thinking something cheery I know it's simply horrible to get in such a slump And I also know it's up to me to get across the hump And I realize I'm selfish to mention this to you For, gee, you might be feeling a little 'low-down' too but often when I feel like this I tell myself it's true That I am not the only one who feels 'low-down and blue' And just knowing there are others who feel the way I do Renews my sinking spirit and keeps me smiling through and know that it's natural to take a 'spirit-dive' Provides the spunk and courage to hang on and survive And while there are a lot of moods that we can drive away by looking on the BRIGHT SIDE in all we do and say, There also is a loneliness that God meant us to feel But, gee, it sure is mighty hard to know which one is real And I'd hate to be a 'sad sack' who never saw the sun And just complained that every day was such a dreary one. But I know that all the dark days are just part of God's plan We should accept them graciously and do the best we can... So I'll just keep on trying for I know it's 'Gospel true' there never was a cloud so dark the sun could not shine through!

I send this little letter out each morning to all my family and friends and even to a few people that I've never met. Many of them send it on to others too. Today is Ash Wednesday which is a Christian holiday that marks the beginning of the Season of Lent. This period of fast can start anytime between February 4th and March 10th, and is traditionally time of religious refection and atonement. Ash Wednesday prepares Christians for Easter Sunday, which celebrates the Resurrection of Jesus Christ.
One tradition of Ash Wednesday is to receive ashes. The ashes in today’s services are made from the blessed palms of that were used on Palm Sunay of the previous year. The ashes are placed on the foreheads as a symbol of penance, the ashes also serve as a reminder that God is merciful to those who wish to repent.
Celebrate today by going to church to recieve ashes or participate in an online service.

As I mentioned yesterday, I’l be watching church services on line today. But for many years I did go and receive ashes on my forehead. It is a very humbling time. I’m having a meatless dinner tonight as part of my fasting for today. On the menu today is:
Creamy Fettuccine with Brussels Sprouts and Mushrooms
Makes 6 servings
12 oz whole wheat Fettuccine
1 Tbsp. olive oil
4 cups sliced mushrooms
4 cups thinly sliced Brussels Sprouts
1 Tbsp minced garlic
1/2 cup dry sherry or 2 Tbsp. Sherry vinegar
2 cups milk
2 Tbsp flour
1/2 tsp salt
1/2 tsp pepper
1 cup finley shredded Asiago cheese, plus more for garnish
Cook pasta in a pot of boiling water until tender. Drain, and set aside.
Meanwhile heat oil in a large skillet over medium high heat. Add mushrooms and brussels sprouts and cook, stirring often until the mushrooms release their joices. Add garlic and cook, stirring until fragrant. Add sherry or vinegar, scraping up any brown bits; bring a boil and cook stirring until almost evaporated
Whisk milk and flour together; add to the skillet with salt and pepper. Cook stirring until sauce bubbles and thickens Stir in cheese until melted. Add the sauce to the pasta, gently toss. Serve with cheese if desired.
I didn’t have any sherry so substituted some Marsala wine for cooking that I had on hand . I also didn’t have Asiago cheese either so used Parmesan cheese instead.
Although I have no reason to go grocery shopping this week I’ve made up a menu using what I have on hand.
Monday - Taco Salad
Wednesday - One Pot Chicken and Brocolli Pasta
Friday - Linquine all Vongole (with clams)
Weekend - Air Fryer Spicy Turkey Tenderloins
