ON THE BRIGHT SIDE
MONDAY,MARCH 14TH, 2022
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Happy Birthday to you♥
Today is also Pi Day which is an annual celebration always celebrated on March 14th and commemorates the mathematical constant of PI. It is celebrated on 3/14 as it signifies the three most significant digits of Pi in the decimal form: 3,1, and 4.
Pi day is celebrated in many ways including eating pie, throwing pies and discussing the significance of the number. Schools may hold many competitions to see which students can recite pi to the highest number of decimal places.
MIT, Massachusetts Institue of Technology has mailed its application decision letters to prospective college students for deliver on this day. Starting in 2012, MIT has posted it’s application decisions on a private website on Pi Day. They have deemed this Tau Time, in honor of the rival numbers Pi and Tau.
Pi has been mathematically calculated to cover the trillion digits beyond its decimal point! It’s infinite nature makes it a fun concept to celebrate and study .
To celebrate today spend some time learning about its origins or trying to memorize as much of it as you can or simply have a piece of pie.
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
We must have a pie. Stress cannot exist in the presence of a pie.
David Mamet
This daughter in law's birthday was one I got to celebrate in person when we went out to dinner on Saturday. We shared the birthday cake that DD made and both of us had Happy Birthday Sung to us and we both blew out candles.
Still I’ll be sending a card to her soon ae I believe birthdays should be celebrated more than one day.
The only pie I have here today is pizza pie, so that is how I will celebrate by having some for lunch. I’m not mathematical at all and get easily confused even thinking about Pi.
It’s Monday and my day to cook something new and on the menu is:
Broccoli, Beaf and Tater Tot Hotdish
Makes 8 servings
1 1/2 lbs broccoli, cut into 1 inch florets
2 Tbsp. canola oil, divided
1 1/2 lbs lean ground beef
1 onion, chopped
2 Tbsp. Worcestershire sauce
1 tsp. garlic powder
1 1/4 tsp salt, divided
4 cups milk
1/3 cup cornstarch
2 cups shredded sharp Cheddar cheese
1 tsp. ground turmeric
4 cups frozen tater tots or veggie tots
1/2 tsp. ground pepper
Olive oil cooking spray
Preheat oven to 450 degrees
Toss broccoli with 1 Tbsp. oil on a baking sheet. Roast, stirring once halfway through, until just soft and browned in spots, about 15 minutes.
Meanwhile heat the remaining Tbsp oil in a large skillet over medium heat. Add beef and oinion and cook, breaking up the beef with a wooden spoon, until the beef is browned and onion is softened. Stir in Worcestershire, garlic powder, and 1/4 tsp salt.
Whisk milk and cornstarch in a large saucepan. Bring to a boil over medium high heat, whisking often, until bubbling and thickened enough to coat the back of a spoon. Remove from heat and stir in shredded cheese, 1/4 tsp salt and turmeric until the cheese is melted.
Spread beef mixture in a baking pan. Top with brocolli and pour the cheese sauce evenly over the top. Sprinkle with tater tots, pepper and the remaining 1/4 tsp.salt. Coat the tots with cooking spray.
Bake the casserole until it is bubbling and the tots are beginning to brown.About 40 minutes. Let stand 10 minutes before serving.
This is a large recipe so I’ll be cutting it in half for me and I’ll still have leftover for tomorrow to enjoy.
We’re looking to be in the 60’s today and I plan to spend some time on the sunporch. It needs some cleaning up after the long winter we’ve had . It’s like an extra room in my house, but I can only use it when it starts to warm up as it is not heated.
I hope you all have a GREAT start to this new week. Happy Monday!!

It's a great day to have a piece of pie !
Great family pictures and happy (Pizza) Pi Day. I may not have my pie today, but there will be a piece of pie this week. Enjoy!
I love the recipe you shared and will be copying it down for a family gathering!
I read your post out loud to Louis Dean and we had to Google how to pronounce tau as well as to what it means! Always learning something when we visit you!
Enjoy your good weather!
Happy Birthday blessings to your pretty DDIL #6! Pizza Pie sounds like a real winner, but I'm trying to be good and keep keto, at least 'til Easter. There's nothing not to love about this recipe! Tom would happily give me his broccoli in exchange for my tater tots!
I think I could put an easy pie together. Your casserole recipe sounds excellent. I copy/paste your recipes for my "this looks awesome" notebook.
Happy 🙂 Birthday 🥳
Thanks for the education. I am late for a happy PI day, but happy Pizza day anyway.
Sending love up your way, been busy, but had NO PIE, but I did think of Pi!
Be safe Always like the pictures.
