Today is National Eggs Benedict Day which celebrates the breakfast dish made with two toasted English muffin halves with poached eggs, bacon or ham and tangy Hollendasise sauce.
Many people claim they invented Eggs Benedict. According to one story, in 1894 a Wall Street broker named Lamuel Benedict went to the Waldorf Hotel to find a cure for his hangover. At the hotel restaurant he ordered toast, poached eggs crisp bacon and Hollendaise. The restaurant chef Oscar Tschrky loved the dish so much that he added it to the menu and named it after Mr. Benedict.
Another account comes from a man named Edward P. Montgomery in 1967 he wrote a letter to the New York Times Magazine claiming that he’d discovered the true inventor of Eggs Benedict . Montgomery’s note contained the recipe created by Commedore E.C. Benedict before his death in 1920. Montgomery received the recipe from his mother who was and acquaintance of the Commodore.
Regardless of where the recipe originated, it is now considered a classic. Enjoy this delicious dish for breakfast, lunch or dinner today to celebrate!

I love having breakfast for dinner, but not today as I have planned to fix my weekly seafood dish.
One Pan Cod and Asparagus Bake
Makes 4 servings
4 cod fillets, 4 oz. each
1 lb fresh asparagus, trimmed
1 pint cherry tomatoes halved
2 tbsp. lemon juice
1 1/2 tbsp.grated lemon zest
1/4 cup grated Romano cheese
Preheat oven to 375 degrees. Place cod and asparagus in a 15 by 10 inch baking pan brushed with oil. Add tomatoes cut sides down. Brush fish with lemon juice, sprinkle with lemon zest. Sprinkle fish and vegetables with Romano cheese. Bake until fish just begins to flake easily with a fork, about 12 minutes.
Remove from pan , preheat boiler. Broil cod mixture 3 to 4 inches from heat until vegetables are lightly browned, 2 to 3 minutes.
Adust the bake time up or down if your fillets are thicker or thiner .I’ll be having this with a baked potato and a side of coleslaw.
