ON THE BRIGHT SIDE
FOR MONDAY, APRIL 26TH, 2021
The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is National Pretzel Day which honors the monks that created the first pretzels from leftover dough. The unique knot shape represented the Holy Trinity but the significance this symbol has evolved over the course of history. During the 17th century, pretzels symbolized the bond of marriage. This is where the phrase, tying the knot originated. Today traditional soft pretzels are popular at sporting events, carnivals, and festivals.
Hard pretzels are a fairly new invention compared to the original soft pretzels. Accouring to legend, in the late 1800’s a Pennsylvania baker forgot a batch of pretzels in the oven. The over baked treats were dark and hard, but the baker sampled one anyway. He was pleasantly surprised by the crunchy deliciousness. Hard pretzels are now one of the most popular snack foods.
To celebrate today, pick up a bag of your favorite type of pretzels to enjoy!

THOUGHT FOR TODAY
I eat a lot. I eat three times a day and I snack.
Suzanne Somers
I love both soft and hard pretzels. My favorite ones are the thin ones, Either sticks or shapes will do as long as I have dip to eat them with. . If it wasn’t for snacks I’d be much thinner than I am. Ha! No chance of that however as I always have lots of them on hand.
We used to have friends over to play cards on the weekend and always served snacks. One of these friends taught me how how much better the pretzels were with dip, and I've loved them ever since..
Today is my day to cook up some real food for dinner and on the menu today is:
Turkey Asparagus Stir Fry
Makes 5 servings
1 tbsp. olive oil
1 lb. boneless, skinless turney breast halves, cut into strips.
1 lb fresh asparagus, cut into 1 inch pieces
4 oz. mushrooms, sliced
2 carrots quartered and then cut into 1 inch pieces
4 green onions, cut into 1 inch pieces
2 garlic cloves, minced
1/2 ;tsp ground ginger
2/3 cup cold water
2 tbsp soy sauce.
4 tsp. cornstarch
1 can sliced water chestnuts
3 1/2 ups hot cooked brown rice
1 tomato, cut into wedges.
In large skillet or wok, heat oil over medium high heat. Add turkey and fry until no longer pink. Remove and keep warm.
Add next 6 ingredients to pan, stir fry until vegetables are crisp tender.Combine water, soy sauce and cornstarch, add to skillet with water chestnuts. Bring to a boil, cook and stir until sauce is thickened. Return turkey to the skillet and heat through. Serve with rice and tomato wedges.
I didn’t have water chestnuts for this recipe but I found out I could substitute diced red peppers instead. They will add a different flavor but I think it will be good. The only turkey breasts I could find was a whole turkey breast so I’ll be roasting the rest of that to put in the freezer to have later on.
Today is to still be cool here with highs in the 50’s. so spending some time in the kitchen sounds good to me. Better to fill up on some healthy food instead of eating too many snacks.
As tomorrow is supposed to be a much warmer. I’ve put pictures of my sun porch out for today. It will be where I’ll be spending my time.

ADVICE FOR TODAY
One of the secrets of a happy life is continuous small treats and if some of these can be inexpensive and quickly procured so much the better.

I love your sun porch Ma and you dinner sounds delicious! I haven't been keeping any kind of snack foods on hand anymore. I leave myself no choice but to choose fruit or veggies to snack on. I actually prefer that for snacks anyway :)
Your sun porch looks like cheery and welcoming! I, too, love those pretzel sticks and dip. A few years ago they were a staple in our pantry. Not sure why we grew tired of them, but now I'm thinking another bag may be in order.
