Today is National Caramel Day which celebrates the delicious chewy; caramel we know and love today. Caramel candy emerged during the 18th century and quickly became one of the most popular sweets on the market. In fact, Milton Hershy’s first business was the Lancaster Caramel Company.
Caramel is made with butter, brown and white sugar, milk or cream and vanilla. It is usually enjoyed as ice cream topping, a candy filling, or on its own. You can find caramel flavored puddings, popcorn, desserts and coffee.
To celebrate today, enjoy some of your favorite caramel candies or make a batch of homemade caramel

My favorite caramel candy is Turtles, which are made with caramel and pecans and covered with chocolate. I also like it as a topping on ice cream. I’ve not made my own, but it’s not hard to do if you want to make your own.
Today DD is on my mind. She’s going to have a minor surgery and will be in and out in one day and won’t have to stay over in the hospital but still it’s surgery so I’ll be keeping her in my prayers.This should correct some problems she’s been havinging and she should be good as new in no time.
DDIL#5 is also going to undergo a medical procedure so I’ll be keeping her in prayer too.
It’s Easter break for many this week and I’ve decided I should take a break too. I can’t think of any place to go, so I’m going to take a virtual trip to the beach. It’s my favorite place to be and when I want to relax, I imagine myself sitting on a beach watching the waves roll in and basking in the warm sunshine. That is what my pictures are of today, the last beach I was able to visit. I’ll be putting on my flip flops and sun glasses and enjoying it all. Thankfully it’s to be a warmer week here with temps in the Mid 60’s and 70’s so hopefully my toes won’t get too cold.
It’s my day to cook something new and on the menu is:
Spicy Weight Loss Cabbage Soup
Makes 8 servings
2 tbsp. olive oil
2 cups chopped onions
1 cup chopped celery
1 cup chopped carrots
1 cup chopped green bell pepper
8 cups sliced cabbage
1 tbsp. tomato paste
1 tbsp. minced chipotle chilies in adobo sauce
1 tsp ground cumin
`1 tsp. ground coriander
4 cups vegetable or chicken broth
4 cups water
2 15 oz cans low sodium pinto or black beans, rinsed
1/4 tsp. salt
1/2 cup chopped cilantro
2 tbsp.lime juice
Crumbled queso fresco, non fat Greek yogurt and or diced avocado for garnish.
Heat oil in a large soup pot . Add onions, carrot, celery, bell pepper and garlic; cook stirring frequently until soffened. Add cabbage, cook, stirring occasionally until slightly softened. Add tomato paste, chipoltle chile, cumin and coriander; cook stirring for 1 minute more.
Add broth, water, beans, and salt. Cover and bring to a boil. Reduce heat and simmer , partially covered, until the vegetables are tender. Remove from heat and stir in cilantro and lime juice. Serve garnished with the cheese, yogurt, and or avocado, if desired.
I don’t like my soup very spicy so I’m going to skip the chipotle chilies when making this soup. I figure the cumin will be enough spice for me. And the cheese I’ll be using will be some grated cheddar for garnish.
This will make plenty of leftover soup to enjoy for lunches this week.

Turtles are my hubby's favorite too. I love Werther's soft caramels filled with chocolate - so good but really hard to find. Prayers for DD and DDIL#5. Enjoy your soup and your virtual trip to the beach Ma :)

That Iris Murdoch quote is SO true. I thought for a minute she was the same Iris who wrote Beaches. But no.

SPeaking of caramel.....NanaDiana shared her homemade recipe and I have made it so many times! It's all a half cup of everything.Half cup of sweetened condenced milk. Half cup of brown sugar. Half cup of butter. Half cup of granulated sugar. Half cup of Karo Syrup. Melt butter in microwave. Stir in the other ingredients. Cook in microwave for 3 1/2 minutes. Stir it down. Cook 3 1/2 more minutes. Stir down. Add 1/2 t. vanilla. Pour into buttered dish. Cool and cut into squares. I put each square in a small paper cup you can get at Hobby Lobby. In Texas, they kind of don't stay in the squares with heat! Really REALLY good!!
