If you can't see the bright side, polish the dull side
Today is also Primrose Day which honors the anniversary of the death of British statesman and prime minister Benjamin Disraeli.1st Earl of Beaconsfield, on April 19th. 1881. The primrose was his favorite flower and Queen Victoria would often send him bunches of the from Windsor and Osborne House. She sent a wreath of primroses for his funeral. On this day Disraeli’s statue in Parliment Square , London is decorated with primroses, as is his grave in Hghenden, Buckinghamshire.
Primroses flower in the early Spring and are often one of the first to appear in the Spring and are popular Easter flowers.

I was blessed with two sisters, but I only have one still living, the other died several years ago now and is very missed. They were born on the same day but two years apart and both are younger than me. I can’t help but think of both of them when I think of one of them. I’m the oldest of 3. It wasn’t always easy being an older sister, but I love them very much. My youngest sister os now in the process of moving so I probably won’t see her today, but I was able to take her dinner a week ago Sunday. She doesn’t live very far away so I’m able to see her often and usually talk to her on the phone at least once a week. So today I’ll be calling her to wish her a very happy birthday filled with love.
On the menu today is:
Turkey Asparagus Stir Fry
Makes 5 servings
1 tbsp. olive oil
1 lb. boneless skinless turkey breast halves, cut into strips.
1 lb. fresh asparagus, cut into 1 inch pieces
4 oz mushrooms, sliced
2 carrots, quartered lengthwise, and cut into 1 inch pieces
4 green onions, cut into 1 inch pieces
2 cloves garlic minced
1/2 tsp ground ginger
2/3 cup cold water
2 tbsp.soy sauce
4 tsp. cornstarch
1 can, 8 oz.
sliced water chestnuts, drained
3 1/2 cups hot cooked brown rice
1 tomato cut into wedges
In large skillet or wok, heat oil over medium high heat. Add turkey, stir fry until no longer pink, Remove and keep warm.
Add next 6 ingredients to pan, stir fry until vegetables are crisp tender. Combine water, soy sauce and cornstarch; add to skillet with water chestnuts. Bring to a boil; cook and stir 2 minutes or until sauce is thickened Return turkey to skillet and heat through. Serve with rice and tomato wedges.
It looks as though today will be the best weather day of the week, we’re to be the mid 60’s but then rain will move in and also colder temps. We’ll be in the 30’s at night giving us a chance of snow until the weekend when we’ll start to warm back up again. Hang in there !
