Today is WORLD Party Day which is a global celebration that seems to make the world a better place. The motto for today is, Party is the opposite of war. The idea behind it is that we can only create a better reality by taking positive action and celebrating life.
The first World Party Day, known as World Party Day I, took place on April 3rd, 1998. The novel Flight by Vanna Bonta inspired the event. The story ends with a countdown to a mass celebration where all of humanity is united. Readers took the idea and organized a real world wide party.
To celebrate today, throw a vitural party .

I do believe every day is a celebration and that there is always a reason to have a party. It’s the day before Easter and all kinds of celebrations will be happening. As you know my celebrating was done a week ago at DS#5;s house but it was a much smaller gathering that usual. Only 3 of my children, their families and my self were albe to be there, but we did have a lot of fun and made our party worthwhile. It’s so good to be together again and most of us are now vaccinated so that makes it safer to gather.
Today, I’m cooking for the weekend and since it will be just me for Easter, I’ll be making:
Slow Cooked Lemon Chicken
Makes 6 servings
6 skinless chicken breast halves
1 tsp dried oregano
1/2 tsp seasoned salt
1/4 tsp pepper
2 tbsp butter
1/4 cup water
3 tbsp lemon juice
2 cloves garlic, minced
2 tsp chicken bouillion granuales
2 tsp. minced fresh parsley
Hot cooked brown rice
Pat chicken dry with paper towels. Combine oregano, seasoned salt and pepper; rub over chicken. In a skillet over medium heat, brown the chicken in butter; transfer to a slow cooker. Add water lemon juice, garlic and bouillon to the skillet, bring to a boil, stirring to loosen browned bits. Pour over chicken.
Cover and cook on low 5 to 6 hours. Baste chicken with cooking juices. Add parsley. Cover and cook 15 to 30 minutes longer. Serve with rice. If desired cooking juices may be thickened before serving.
I didn’t have chicken breasts so I used chicken thighs instead. Make do and waste not. I also use Mrs. Dash instead of seasoned salt.It gives everything a good flavor. Sorry, it seems I also posted this recipe last week by mistake.Last week should have been Creamy Chicken and Rice Soup. My mistake so today I’m sharing the recipe for that one too.
Creamy Chicken and Rice Soup
Makes 4 servings’
1 tbsp. oil
1 carrot, chopped
1 rib celery, chopped
1/2 cup chopped onion
1/2 tsp. minced garlic
1/3 cup long grain rice
3/4 tsp dried basil
1/4 tsp pepper
14.5 oz chicken broth
3 tbsp. flour
1 can evaporated milk
2 cups cubed cooked chicken breast
In a large saucepan, heat oil over medium high heat; saute carrot, celery and onion until tender. Add garlic, cook and stir 1 minute. Stir in rice, seasonings and broth. bring to a boil. Reduce heat; simmer uncovered until rice is tender.
Mix four and milk until smooth, stir into soup . Bring to a boil; cook and stir until thickened, Stir in chicken and heat through.
I had this along with a crusty roll and fresh fruit.
The pictures today are of the last Easter we were able to gather and that was in 2019 also at DS#5’s house. But there were a few more people there.

Despite our weatherman's predictions for mid-80's weather next week, I'm going to make this soup on Wednesday. That's the day Tom gets his #2 vaccine, and I want to be prepared in case he gets to feeling punky and needs some comfort food.
