Today is Good Friday which is a Christian holiday that commemorates the cruxifixction of Jesus, which most probably took place on a Friday before his resurrection on Easter Sunday. It is celebrated during Holy Week on Friday before Easter Sunday. It is sometimes called Easter Friday, for Good Friday often coincides with the Jewish Passover. Good Friday is a fast day when you have one full meal and two light meals in which meat should be substituted with fish. Good Friday is a legal holiday in most Western Countries.
In the United States it is not a federal holiday, however many individual states and municipalities may observe the holiday. Schools generally do not close, but the day may fall during Spring break. The majority of business are open but the stock market is closed. The postal service operates, and banks do not close.
Many Christian churches celebrate with a special service . Jesus’ death and the results of the death for the people are the main topic. Regarding to Christianity, He died for the people, who remain sinners. This is supposed to be a Gift from God to the Christians, God let His own son die to show his love. On Good Friday prayers of thanksgiving and solemn hymns remember the suffering of Jesus’ and his death at Calvery.The cruxifixction was the most painful method of punishment, where Jesus hands and feet were bound and nailed to the cross, which he himself had to carry to Calvary.

What is good about Good Friday? Why isn’t it called Bad Friday? Because out of the appallingly bad came what was inexpressibly good. And the good trumps the bad, because though the bad was temporary, the good is eternal.

I have always thought Fridays were good but this one is extra special. Hopefully, I’ll be watching church services on line and preparing some meatless meals to eat. I’ll be making some egg salad for lunch and for dinner I’ll be fixing:
Easy Crab Cakes
Servings 4
1 egg
2 tbsp mayonaise
2 tsp Dijon mustard
1/4 tsp black pepper
Pinch of salt
Pinch of cayenne pepper
1/4 cup chopped scallions
12 oz lump crabmeat, drained and picked over
3/4 cup of wholewheat breadcrumbs
2 tbsp olive oil
Lemon wedges for serving
Whisk egg, mayonaise, mustard, pepper salt and cayenne in medium bowl until combinesd.Stir in scallions. Add crab and breadcrumbs, stir to combine. For the mixture into four 1/2 inch thick patties.
Heat oil in a nonstick skillet over medium heat. Add crab cakes and cook, turning once, until golden brown. 4 to 5 minus on each side. However, I’m using my oven fryer to do theses instead of the stove top. Serve with lemon wedges. I’ll be having mine with some coleslaw and some oven fried Zucchinni.

Have a fantastically Good Friday !
My kids used to love coloring the eggs and always wanted to do way more than we needed. Easter brunch featuring egg salad became our traditional Easter meal as a result back in those days. Have a lovely Good Friday Ma!
Those crab cakes look easy, indeed! Now I'm wondering if they don't still sell that faux crabmeat. (On account of my shell-fish allergy.)
Those eggs your grandsons created look almost too beautiful to eat!
