Today is International Moment of Laughter Day which reminds us that even in the midst of hardship, it is important to laugh loudly and laugh often. Watch a funny movie, read an amusing book, share your favorite jokes and indulge in some good old fashioned silliness to celebrate today.
In addition to spreading joy, laughter has many healthy benefits. Studies have shown that there is indeed some truth to the old saying, laughter is good medicine. Laughter can act as an antidote to pain, stress and conflict. It also strengthens our immune systems. boosts circulation and relaxes muscles.
Whether you giggle, chortle, cackle, or guffaw, share a monent of laughter with your loved ones today.

I’m so blessed to have lots of people in my life to lough with. Not a day goes by that we don’t find something to laugh about. More times than not I find myself laughing at myself. It’s so much better than crying when you get stressed out.
Laaghter always makes me feel better and that is what my pictures are of today, family laughing.
It’s Wednesday and my day to cook something new to eat and it’s also my day to go grocery shopping so I’m sharing what’s on the menu and also what my menu for next week is. It’s what I make my shopping list from.
On the menu for today is:
Saucy Mediterranean Chicken with Rice
Makes 4 servings
3/4 cup water
3 tbsp tomato paste
2 tbsp. lemon juice
3/4 Tap. salt
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp ground ginger
1/4 tsp ground fennel
1/4 tsp numeric
1 tsp ground coriander
3 tbsp. olive oil
1 onion chopped
2 pound boneless skinless chicken breasts
3 cups hot cooked brown rice
Minced fresh parsley, optional
In small bowl, mix the water tomato paste, lemon juice, salt, chili powder, garlic powder, gingier, fennel, turmeric and if desired, coriender until smooth.
In large skillet heat oil over medium high heat. Add onions, cook and still until tender. Stir in chicken; brown 3 to 4 minutes. Pour water mixture into pan.
Bring to a boil. Reduce heat, simmer, uncovered until chicken is no longer pink . Serve with the rice and if desired, top with parsley.

Monday- Turkey Asparagus Stir Fry
Wednesday - Cheese Tortellini with Tomatoes and Basil
Friday - Light and Lemony Scampi
Weekend - Skillet Steak with Mushroom Sauce
It looks to be a cloudy day ahead but thankfully only a slight chance of rain is in the forecast so it should be a great day to get out and about.
