ON THE BRIGHT SIDE
FOR SATURDAY, APRIL 17TH, 2021
The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a special occasion!

Today is National Cheeseball Day which celebrates the kind of traditional cheese snack you eat spread on crackers. The other kind of cheeseball is the bright orange , marble sized snacks that turn your fingers orange, similar to cheese doodles. But today we’re celebrating the type you might serve with crackers at a party.
The traditional cheeseball appetizer includes ingredients like cream cheese, cheddar cheese, nuts, salt, pepper, garlic and Worcestershire Sauce. Gormet vsersisns use bleu cheese, olives, pineapple, sherry, or smacked salmon. According to a legend a man named Elisha Brown Jr. pressed the first cheeseball at his farm in 1801. It weighted 1,235 pounds. He presented it as a gift to President Thomas Jefferson at the White House.
To celebrate today pick some cheese balls at your grocery store or make your own gourmet cheese ball as a dinner appetizer.
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
Without the weekend, where would the week be?
Anthony T. Hicks
I love cheeseballs and often have them for the family when we gather for holidays. To me they are a party food and I don’t make them just for me. They are reasonably easy to make and don’t take a lot of time, But they are more than is needed for just one person.
It’s Saturday and my day to cook for the weekend so on the menu today is:
Pizzaiola Chops
Makes 4 servings
2 tbsp. olive oil, divided
4 boneless pork loin chops
1 tsp salt, divided
1/4 tsp pepper, divided
1 1/2 cups sliced mushrooms
1 medium sweet yellow peppy, coarsely chopped
1 medium red pepper, coarsely chopped
2 tomatoes, chopped
1/2 cup chicken broth
1 /2 tsp oregano
2 garlic cloves, minced
Hot cooked brown rice, optional
In large skillet heat 1 tbsp. oil over medium high heat. Season chops with 1/2 tsp. salt and 1/8 tsp. pepper. Brown chops on both sides. Remove from pan.
In same pan heat remaining oil over medium high heat. Add mushrooms, yellow and red peppers, cook and stir until mushrooms are tender. Add tomatoes, wine, oregano, garlic and remain salt and pepper. Bring to a boil. Reduce heat and simmer, uncovered, 2 minutes.
Return chops to pan. Cook covered, until a thermometer inserted in pork reads 145 degrees, 5 to 7 minutes. Let stand 5 minutes before serving over brown rice.
After some colder weather here in Ohio, it looks like it will be warming up some this weekend. Today we’re to be in the 50’s and tomorrow in the 60’s with partly sunny skies. What could be better?
I’ve no new pictures to share so today’s picture are from the internet.
I hope you all have a SUPER Saturday!!

Hace a great weekend everyone !
I love cheeseballs too and also always have them included on my holiday appetizer buffet. I recently did buy one just for me and my hubby the week we had charcuterie board meals planned for the whole week. :)
I love cheeseballs, too ... and could (have) made an entire meal of something called 'smokey boardwalk' and crackers. Your chops recipe sounds really, really good. I'm clipping and pasting!
