Today is Today National Empanada Day which celebrates a delicious Spanish and Portuguese type of stuffed bread. Empanadas can be served hot or cold, as a main course or as a side dish.
They are made by folding dough around a premade stuffing of chicken, cod or pork loin. Other ingredients include tomatoes, garlic and onion sauce.
This delectable dish originated in Europe. Immigrants brought the recipe to various countries around the world where it was adopted and slightly altered to fit the tastes of that particular country. In Argentina, for example, empanadas are made with a fruit filling and served as dessert. In Jamaca, empanadas are referred to as Jamacan patties and are made with crispy dough.
Celebrate today and make your own empanadas for dinner.

Although I have had and do love empanadas, they are not on my menu today because I have leftover meatballs to enjoy and I’ll not be making anything new
We’ve been having a wonderful week here with temps in the upper 70’s and low 80’s which is quite summer like for us. It’s been so nice to open up the windows and let the fresh air in the house. After being closed up all winter, it is needed. There’s nothing like fresh air and sunshine !
I’ve been doing a lot of porch sitting and just enjoying my spring break. The pictures today were taken on the sun porch as I sorted through my flip flops to wear this week.
They say we’ll be back in the 60’s for the weekend and in the 50’s next week so I couldn’t have picked a better week for my Spirng break.

Out of all of those my very favorite are spicy Jamaican patties, they are so delicious! I'm glad you are having beautiful weather for your spring break. I hope you can update new photos soon. Enjoy the day Ma. :)
