ON THE BRIGHT SIDE
FOR WEDNESDAY, JANUARY 6TH, 2021
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is Three Kings Day, or Epiphany, which commemorates the biblical story of the three Kings — Melchlor, Caspar, and Blthazar. The three kings also known as the Wise Men or Magi, that followed the bright star of Bethlehem to bring gifts to the Christ child.
Traditionally in Latin American, children dress up in king costumes and go door to door in their neighborhoods singing carols in the days leading up to Three Kings Day, in Argentina, sweet wine, fruit and milk are left outside for the three kings and their camels to enjoy. In France, people eat Galette des Roais, or king cake, which has a trinket or bean hidden inside of it. The person who receives the piece of cake with the trinket becomes the king for the day.
The Three Kings Day always falls at the end of Christmastide, also known as the 12 Days of Christmas. Traditionally, this is the day when all Christmas trees and decorations are taken down.
If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
All men make mistakes, but only wise men learn from their mistakes.
Winston Churchill
I’m celebrating today and will be putting my Christmas decorations away, or at least I will start on it. It may take me the rest of the week to get it all done.
It’s also the day I do a door Blessing for my house. Marking above the door in chalk with the Letters and numbers 21 + C +M + B+ 20. This is done as a house blessing and I’ll say a little prayer that, All our comings and goings are blessed as you go through the door. It’s an old tradition. The letters stand for May Christ Bless this House as well as the legendary names for the three wise men, Caspar, Melchior and Balthasor and the numbers represent the year coming and going.
We are to have another mostly cloudy day with a small chance of snow flurries. It’s to be in the mid 30’s and cold outside so bundle up when going out for any length of time.
The pictures today are of my Nativity set which features the 3 kings. It will also be packed away for another year.
On the menu for today is:
Slow Cooker Pasta e Fagioli
makes 8 servings
1 lb. lean ground beef
1 onion, diced
32 oz. chicken broth
2 cans, 14.5 oz., diced tomatoes, undrained
1 can cannelloni beans, rinsed and drained
2 carrots, chopped
1 1/2 cups finely chopped cabbage
1 celery stalk, chopped
2 tsp. basil
2 cloves garlic, minced
1/2 tsp. salt
1/2 tsp. pepper
1 cup ditalini or other small pasta
grated parmesan cheese, optional
In large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, drain
Transfer to a slow cooker. Stir in broth, tomatoes, beans, carrots, cabbage, celery, basil, garlic and pepper. Cover and cook on low 7 to 8 hours
Stir in pasta and cover and cook on high until pasta is tender, about 30 minutes longer. Sprinkle with cheese if desired.
This could also be made with italian sausage for extra flavor, but I’m using the beef today. It’s delicious on a cold winter day.
It’s also my day to shop for groceries for next week and I have a new menu to share with you
Monday - Steak with Glazed Carrots and Turnips
Wednesday - Tuscan White Bean Soup
Friday-One Pot Garlicky Shrimp and Spinach
Weekend - Roast Chicken with Parmesan Herb Sauce
I hope you all have a WONDERFUL Wednesday !

Time to put Christmas away for another year.
I love your home blessing Ma. Enjoy that Slow Cooker Pasta e Fagioli tonight, perfect weather for it. Your menu for the week sounds great too. Stay warm and don't work too hard today.
I've never heard of that house blessing and writing the letters and numbers in chalk! I love the things I learn from you! God bless you!
I'm not familiar with that house blessing, either ... but I really like it. We put away our Christmas tree and most of the decor, as well. Always leaves me feeling a little sad, you know?
Yummy on your menu for the week ahead Ma! I too hadn't heard of that door blessing :) We always took down our Christmas tree when I was growing up after January 6th.
