ON THE BRIGHT SIDE
FOR MONDAY, JANUARY 25TH, 2021
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is Bubble Wrap Appreciation Day which honors an American engineer named Al Fielding and a Swiss inventor named Marc Chavannes who created Bubble Wrap. They were actually trying to come up with a textured plastic wallpaper, but soon realized that their project had huge potential as a packaging material.
Fielding and Chavannes formed the Sealed Air Corporation and introduced Bubble Wrap to the public in January of 1960. Today Sealed Air is a global Fortune 500 company and produces enough Bubble Wrap to stretch from Earth to the moon each year.
Sealed Air has sponsored annual Bubble Wrap Competitions for young inventors. Kids completed to create the most innovative product using Bubble wrap as the primary material. Past winners include floating gardens, a cell phone cover, a swing for children with movement disorders, and a transformable kite kit.
To celebrate today enjoy poping an entire roll of Bubble Wrap bubbles.
If you can’’t see the bright side, polhish the dull side
THOUGHT FOR TODAY
Therapy is extremely expensive. Popping bubble wrap is radically cheap.
Jimmy Buffet
I always keep a roll of Bubble Wrap on hand here to wrap gifts in that might be breakable. There is nothing does quite as good a job and it weighs proctically nothing so it doesn’t increase the shipping costs either. It’s less messy than the plastic noodle things we used to use and does a great job of protection.
It’s also fun to pop the bubbles and it’s a good stress reliever.
As I haven’t been painting anything at all, I haven’t had much in the way of gifts to give either. But that’s going to change. I’m looking for a new project to start for Easter this year. So that’s my new thing for today. Hopefully I’ll find something to inspire me to get going and paint again.
The picture above is what I painted a couple of years ago. Last year I did nothing, such a waste of time. I was home all the time with nothing to do. This year I want to be better than that !
On the menu for today is
Inside Out Lasagna
Makes 4 servings
8 oz. whole wheat rotini or fusilli
1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, minced
8 oz. diced mushrooms, about 3 1/2 cups
1/2 tsp. salt
1/4 tsp pepper
1 14 oa can diced tomatoes with Italian herbs
8 cups baby spinach
1 tsp crushed red pepper
3/4 c. ricotta cheese
Bring a large pot of water to boil. Add pasta; cook until just tender, or according to package directions. Drain and transfer to a large bowl.
Meanwhile, heat oil in a skillet over medium heat. Add onion and carlic stirring until soft and beginning to brown. Add mushrooms, salt and pepper and cook stirring about 6 minutes.
Add tomatoes, spinach and crushed red pepper. Increase heat to medium high, cook stirring occasionally, until spinach is wilted.
Toss the sauce with the pasta and divide among 4 bowls. Dollop each serving with 1 tbsp. of ricotta.
This is good served with steamed broccoli and a whole wheat baguette of bread
It’s a simple easy dish that will satisfy the whole family. For meat lovers, you can add a pound of ground turkey when browning the onions. I won’t be adding anything else to mine and it should still be very good.
This is a new recipe to me to try out. How about that, 2 new things in one day. A new project to start and a new meal to enjoy. What could be better than that?
I hope you all have a GREAT start to a new week. Happy Monday !

It's a new week, a new start and God has something new for us today !
I had no idea that you painted, can't see what you'll make! :)
I, too, am looking forward to what you choose. I'm guessing what you do is 'free-hand'? But for those of us (me) artistically-challenged, could you maybe share some of your steps along the way? TIA!
What you painted is fantastic show us more:)
