ON THE BRIGHT SIDE
FOR THURSDAY, JANUARY 14TH, 2021
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

THOUGHT FOR TODAY
Our perfect companions never have fewer than four feet.

I have no pets to dress up today, but I do have pictures of DS#5’s dogs dressed up for Christmas this year. I took them when I went for Christmas dinner at his house. They are just adorable in their outfits and love them dearly.
However what you are seeing is pictures of some of my grand pets. Blogger still won't let me add new pictures.
This time of year many people put a sweater on their pets when they go outdoors to give an extra layer of warmth. Especially the short haired dogs. Long hair dogs seem to have plenty to keep them warm with all the hair they have.
Getting an out fit to fit isn’t always easy, but my DIL looks have made a good choice in the size of their outfits.
It’s Friday and a day to cook for me and on the menu is
One Pot Garlicky Shrimp and Spinach
Serves 4
3 tbsp. olive oil
6 cloves garlic, minced and divided
1 lb. spinach
1/4 tsp salt, plus 1/8 tsp.divided
1 tsp lemon zest
2 tbsp lemon juice
1 lb shrimp, 21 to 30 count, peeled and deveined
1/4 tsp crushed red pepper
1 tsp. parsley
Heat 1 tbsp. oil in a large pot over medium heat. Add half the garlic and cook until beginning to brown. Add spinach and 1/4 salt and toss to coat. Stirring once or twice until wilted. Remove from heat and stir in lemon juice. Transfer to a bowl and keep warm.
Increase heat to medium high and add remaining 2 tbsp. oil to the pot. Add remaining garlic and cook until beginning to turn brown. Add shrimp, crushed red pepper and remaining 1/8 tsp. of salt. Cook shrimp until it is just cooked through, 3 to 5 minutes more. Serve the shrimp over the spinach, sprinkled with lemon zest and parsley.
Make sure to get your garlic browned to bring out the garlicky taste. This is good served with a slice of whole wheat toasted baguette to swipe up ever last drop of sauce.
It’s looking like a day to stay home and freshen up the house. I have removed my Christmas throws and table cloths so I need to put some fresh ones on for the new year.Blue and white is the color theme.
I hope you all have a GREAT day. Happy Thursday

The sun is shinning here today, it's going to be a great day !
Mmmmmm ... Tom and I were just talking about spinach a little while ago!
Your grand-pups are so cute. Given this morning's 27*, I tried putting coats on our dogs. Nope, they've outgrown both of theirs. Thankfully, it's dry and they don't stay out any longer than is necessary.
All the fur babies are so cute! You color theme for the new year is perfect and your meal for this evening sounds great too!
Who would have thought of a national dress your pet day. The first picture is so sweet and the little black dog is too cute.
