Today is Blueberry Pancake Day which celebrates pancakes with s delicious Blueberry syrup on them. They are nutritious to eat for breakfast, tasty enough for a mid day snack and easy enough to make for dinner.
To make blueberry pancakes, mix up a batch of your favorite pancake batter. Wash the blueberries, pat them dry and once you’ve poured the batter on the griddle, drop a few blueberries on top. this will ensure your blueberries aren’t bruised during the cooking progress and will be perfect burst of flavor when you bite into your pancake.
To celebrate, make a delicious batch of them and top them off with blueberry maple syrup.

I don’t have any blueberries here to enjoy, but I do have blueberry syrup in the cupboard so I can still celebrate today. Pancakes sound really good right now. I’ll be having mine for lunch. I’m not ready to eat breakfast until later. Brunch is what I call it. Between breakfast and lunch.
Sometimes I eat only two meals a day. Bunch and Lupper. Which is between lunch and supper. Today for dinner I’ll be fixing
Spicy White Chili
Nonstick cooking spray
1 tbsp. olive oil
2 c. chopped onion
4 cloves garlic, minced
1 4.5 o. can diced green chili peppers. undrained
1 tbsp. chili powder
1 tsp oregano, crushed
1/4 tsp cayenne pepper
3 15 oz cans cannelloni beans or white kidney beans, rinsed and drained
2 4.5 oz cans chicken broth
1 cup water
5 cups cubed cooked chicken breasts
1 cup shredded Montery Jack cheese
1/4 c. sour cream
1 bunch snipped fresh cilantro
1 pinch Chili powder
Coat an unheated skillet with cooking spray. Add oil, heat over medium high heat . Add onions and garlic, cook 5 to 6 minutes or until tender, stirring often. Stir in green chili peppers, 1 tbsp. chili powder, oregano and cayenne pepper. Cook 1 minute and transfer to a slow cooker.
Mash one can of the beans. Stir all the beans, broth and water into mixture in slow cooker. Stir in chicken Cover and cook on low setting for 6 hours or on high for 2 to 3 hours. Add 3/4 c. of shredded cheese, stirring until melted. To serve, top with 1 tsp. of sour cream, a tsp. of remaining cheese. If desired garnish with cilantro and additional chili powder.
You can also top this chili with hot sauce if you love the heat. Not me, I like it mild. I think I’ll make a pan of corn bread today to serve along with this.
Wednesdays are usually my day to go grocery shopping and for that I’ve made up a menu for next week so I’ll know what to get.But today I have a haircut apartment so it will be tomorrow instead.

Monday - One Pot Meaty Spaghetti
Wednesday-Busy Day Pork Chops
Friday - Caribbean Shrimp and Rice Bowl
Weekend - Italian Beef Tortellini Stew

Blueberries strawberries and blackberries are true super foods. Naturally sweet and juicy, berries are low in sugar and high in nutrients. They are among the best foods you can eat.

It'a going to be great day to be out here in Ohio today, the roads are clear which makes traveling easier.

I like the sound of that white chili! Especially the part about mashing the beans -- I'm thinking if Tom doesn't suspect there are beans in there he might actually eat it. 🤣
Blueberries are actually one of the fruits I do enjoy. I can't remember what it was called, but there used to be a pancake restaurant with all different kinds of syrup on the table top, and I'd choose the blueberry flavor.
