ON THE BRIGHT SIDE
FOR SATURDAY, JANUARY 23RD, 2021
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is National Pie Day which celebrates the sweet filled treats we enjoy today. They are a relatively resent innovation. The Greeks and Romans made some of the first pies in history. People filled pastry shells with different kinds of meat or seafood, flavored them with a variety of spices, and served them as part of the sweet course of the meal
When the Pilgrims made their voyage to the New World in the 1600’s they arrived with English pie recipes for beef, lamb, duck or pigeon. It wasn’t until the late 1800’s that the first sweet pies emerged. These featured ingredients we’re accustomed to today, and by the 1940’s, pie had become the iconic American dessert.
Whether you prefer, apple berry, pumpkin, or sweet potato, bake you favorite pie recipe tonight in honor of the day.
If you can’’t see the bright side, polhish the dull side
THOUGHT FOR TODAY
We must have a pe. Stress cannot exist in the presence of a pie.
David Mamet
I do have a lemon meringue pie in the fridge right now so I’ll be able to celebrate today. It’s one of my favorites, no matter whats season it is. I didn’t make it but bought it at the grocery store this week. So I’ll definitely be have a slice today.
It’s my day to cook for the weekend and on the menu is:
Slow Cooker Honey Orange Drumsticks
1/2 cup honey
2 tsp. orange zest
2 tbsp. orange juice
3 tbsp. soy sauce
3 cloves garlic, minced
1 1/2 tbsp. minced fresh ginger
1 tbsp rice vinegar
1/4 tsp crushed red pepper
12 chicken chicken drumsticks, 3 1/2 lbs.
2 tbsp. chopped fresh cilantro
2 tsp toasted sesame seeds, optional
Combine honey, orange zest, orange juice, soy sauce , garlic, ginger, vinegar, and crushed red pepper in a small bowl.
Coat a slow cooker with cooking spray to prevent sticking. Add drumsticks, pour in the sauce and mix to coat. Cover and cook until an instant read thermometer registers 165 degrees when inserted into the thickest part of the meat without touching bone, 2 6o 3 hours on high or 4 hours on low.
Transfer the drumsticks to a bowl. Very carefully pour the liquid from the slow cooker into a medium skillet. Bring to a boil on high heat. Boil until reduced and syrupy.Pour over the drumsticks and stir to coat. Serve sprinkled with cilantro and sesame seed if desired.
Serving size is 2 drumsticks per person. I used ground ginger instead of fresh. Use 1/4 tsp of ground ginger for every tablespoon of fresh ginger.
I’ll be cooking only half this recipe as it will be only me here this weekend. I;ll enjoy this with a side of stir fried vegetables. They would also be good served with stir fried rice.
The pictures today are mostly of pumpkin pie, because it seems I have a lot of pictures of them, but they are not the only kind I love. There’s apple, blueberry, cherry and lemon meringue.
I hope you all have a SUPER Saturday !
COUNTING MY GIFTS
Things that really matter are the things gold can’t buy, so let’s have another cup of coffee and let’s have another piece of pie.

I hope to find a remedy for this picture problem soon. It's confusing .
Your weekend dinner sounds delicious. Enjoy that pie too!
ANY pie is my favorite dessert -- at one time or another. Sometimes, the crust's the best part. :)
Tom made himself wings in the air fryer last night, but was talking about trying drumsticks next time. I'll have to show him this.
Your recipe sounds good! I don't think I have your address! If I did, I would send you a jar of my honey!!
Louis Dean's granddaughter just made honey diijon chicken using honey I had mailed to her and she said it was delicious. She's made honey glazed carrots several times and now I need to send her another jar! If you send me your address by email - I will send you one, too!
