Today is National Rubber Ducky Day which celebrates the day in 1970 when Jim Henson performed the song Rubber Duckie on Sesame Street,The rubber duck bath toy has been an iconic American symbol ever since. Rubber ducks have been around since the rise of the rubber industry in the late 1800’s., but no one knows their exact origin.
In January of 1992, a shipment of 29,000 rubber ducks fell off a cargo ship in the Pacific Ocean and by 2007, the friendly flammables had traveled 17,000 miles around the world on the ocean current. Some are still afloat today. Over time people reported sing them in places like Austrailia, Indonesia, South American, the Bering Strait, the Arctic and the Atlantic Ocean.

When the babes were little, we had rubber ducks for toys in the bath, but these days not so much. I have seen them floating around in some of their swimming pools though.
It’s Wednesday and time to create a new menu for next week
Monday- Sirloin with Mushroom Sauce and Cheese Smashed Potatoes
Wednesday - Chili Tortilla Bake with Lettuce Salad
Friday -Lemon Parsley Baked Cod with Carrot Brown Rice Pilaf
Weekend - Terrific Turkey Meatloaf with Confetti Quinoa
I’ve got the grocery list made and will be going shopping today.
On the menu for today is
Tuscan White Bean Soup
Makes 8 servings
1 lb dried great northern beans
1 tbsp. olive oil
1 1/3 c. diced onion
1 c. diced carrots
1 c. diced celery
2 tbsp. chopped garlic
4 c. chicken broth
4 c. water
2 bay leaves
1 tbsp. parmesan
6 c. chopped spinach
1 can 15 oz, diced tomatoes with basil, garlic and oregano, drained
1 tsp rosemary
3 tbsp white wine vinegar
1 tsp salt
1 pinch pepper to taste
Sort beans, then rinse under cool water and transfer to a large bowl. Add 3 quarts water, cover and soak for 8 to 24 hours.
Heat oil in large pot over medium heat. Add onions, carrots and celery and cook until starting to soften. Stir in garlic, cook until fragrant.
Stir in broth, water, the soaked beans, bay leaves, and parmesan, if using. Increase heat to high, bring to a boil and cook for 5 minutes. Reduce heat to low, partially cover and simmer 45 minutes.
Stir in spinach, tomatoes, and rosemary. Partially cover and cook until beans are tender, about 30 minutes more.
Discard bay leaves and stir in vinegar and salt, season generously with pepper.
This would be good served with whole wheat toast and a side salad.

Me, too! I'd forgotten that story of the 'ducks overboard' but it brought a smile to my face all over again.
Oh that soup sounds good. I would have it with cornbread, for sure!
