Today is National Polka Dot Day which celebrates Disney’s most esteemed fashionista, Minnie Mouse. Minnie is not only Mickey Mouses beloved counterpart, but is a sassy sweet pop culture icon who popularized the polka dot pattern.
In honor of Polka Day wear you favorite polka dot outfit to celebrate.

I’m not sure if I have a polka dot outfit in my closet but I do have a Polka Dat coat in the closet that I wear in the Springtime. It’s black with white polka dots and I’m looking forward to wearing it again. Spring has to be my favorite season. It’s not too hot or too cold. Just right for the most part and I’m tired of being cold.
I found the pictures shared today on line, so I’d have some polka dot pictures to share. Unfortunately I cannot add new pictures at this time so the only polka dot picture I could find is my cute little love bug that is in my floral display.
It’s Friday and the end of another week, another reason to celebrate today. I’m thankful that even though I didn’t get everything done, at last I got a few things accomplished and that is better than nothing for sure.
It’s a day to enjoy another new recipe too. On the menu for today is:
Lemon baked Cod with Carrot Brown Rice.
Lemon baked Cod
3 tbsp. lemon juice
3 tbsp. butter, melted
1/4 c. flour
1/2 tsp salt
1/4 tsp. paprika
1/4 tsp lemon pepper seasoning
4 cod fillets
2 tbap. minced parsley
2 tsp lemon zest
Preheat oven to 400 degrees. In a shallow bowl, mix lemon juice and butter. In a separate bowl, mix flour and seasonings. Dip fillets in lemon juice mixture then in the flour mixture to coat both sides.
Place in a 13X9 baking dish coated with cooking spray. Drizzle with remaining lemon juice mixture. Bake 12 to 15 minutes or until fish begins to flake easily with fork.Mix parsley and lemon zest, sprinkle over fish.
Go for freshly squeezed lemon juice when preparing this dish. Bottled lemon juice won’t provide the same bright fresh flavor.
Carrot Brown Rice
1 onion, finely chopped
2 medium carrots, shredded
1 tbsp butter
1 cup uncooked brown rice
2 1/2 cups vegetable broth
1 tbsp dried parsley flakes
1/4 tsp salt
1/8 tsp. pepper
In large saucepan sauté the onions and carrots in butter until tender. Add rice and stir until lightly browned.
Stir in broth, parsley, salt and pepper. Bring to a boil. Reduce heat and simmer covered for 40 to 45 minutes until rice is tender. Fluff with a fork.

Polka dots make me happy, too. My favorite pajama top is black-and-white polka dots. If memory serves, I think Julia Roberts had a beautiful brown-and-white polka dot dress in Pretty Woman.
