Today is Ntional Fig Newton Day which celebrates the third most popular cookie in the United States, with over 1 billion eaten each year.
Myth has it that Nabisco’s chewy cookies were named after Sir Issac Newton, but in reality they were named after their birthplace of Newton, Massachusetts. These cookies are made in over 5 varieties aside from the original fig, including strawberry, apple cinnamon, sweet peach and apricot and triple berry.
This popular snack food was created by the Kennedy biscuits Works located in Cambrigeport, Massachusetts. They were known for naming many of their cookies after neighboring towns - the Newton in Fig Newton is nod to the nearby town.
To celebrates this holiday, open up a fresh pack of them to enjoy as a snack or as a sweet ending to your meals.

I do like Fig Newtons and usually have some on hand here, so I will be having one or two for my dessert today.
It’s Saturday and my day to cook for the weekend, My dinner for today is:
Roast Chicken with Parmesan Herb Sauce.
makes 4 servings
2 skinless chicken breasts
1/4 tsp salt, divided
1/2 tsp pepper, divided
3 tbsp. flour
4 tbsp. olive oil, divided
6 oz. broccoli
3 cloves garlic minced, divided
1/3 cup ;dry white wine or apple juice
1 cup chicken broth
1/4 c grated Parmesan cheese
2 tsp fresh thyme, divided
2 cups whole grain rice blend
Position a rack in lower third of oven; preheat to 425 degrees. Prepare rice blend according to package directions. Keep warm.
Cut each chechen breast in half crosswise on the diagonal into 4 roughly equal portions and sprinkle with salt and pepper. Place flour in shallow dish and dredge lightly ; reserving remaining flour. Heat 2 tbsp. oil in large skillet over medium heat. Add the chicken skinless side down cook until browned about 6 minutes.Transfer the chicken, skinnless side up, to a rimmed baking sheet. Reserve the skillet.
Toss the broccoli with remaining 2 tbsp oil, half the garlic and 1/4 tsp. salt. Spread out on other half of the baking sheet.
Roast until the broccoli is tender and an instant read thermomenter inserted into the thickest part of the chicken reads 165 degrees, 15 to 20 minutes.
Meanwhile whisk 4 tsp. of the reserved flour and wine and mix in a small bowl until combined. Place skillet over medium heat, add remaining garlic and cook stirring for 30 seconds. Add broth, bring to a boil over high heat. Add the wine mixture and cook, stirring frequently until thickened and reduced to about 1 cup. Add Parmesan, 1 tsp thyme and remaining salt and pepper.
To serve, divide the chicken, broccoli and rice among 4 dinner plates. Spoon the sauce over chicken, broccoli and rice and sprinkle with remaining thyme.
Note; For easier clean up, you can line your baking sheet with foil before using.
We’re supposed to get some snow today so it will be a good day to turn the oven on. Keep warm everyone and stay safe at home. I’ve started getting my Valentine’s decorations out and hopefully will finish up today. That is what the pictures are of today.

I have not seen the apricot fig newtons - but I will be looking for them!! I usually have a package of some kind of fig newtons on hand.....
