ON THE BRIGHT SIDE
FOR SATURDAY, JANUARY 9TH, 2021
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a special occasion!

Today is Peculiar People Day which honors the people who do not really correspond to the pattern. That might be because they like crazy things , keep on their own, or act somehow weird in one or the other way. It’s an opportunity to take a closer look at the ones around you who stand out in society. Maybe you will have more in common that it occurs to the eye, if not a weird hobby or attitude.can be likeable and entertaining. It’s a day to for tolerance and celebrating the variety of people in soiety.
If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
Every man is said to have his peculiar ambition.
Abraham Lincoln
I happen to think we are all made unique and wonderful people. No two of us are alike. What a dull world it would be if everyone was the same. We all like to do different things and excel in different talents.
Just because someone doesn’t do what you do, doesn’t mean it’s bad, it’s good that we are all different and unique. I may be a peculiar person to some, as I like to celebrate every day and always try to look on the bright side. Every day may not be good but there is something good to be found in every day when we look for it.
The news here this morning is that its’s going to be a sunny day and our temps may get close to 40 degrees. It has been awhile since we’ve had sunshine, so this is definitely news worthy. Don’t forget to take your sunglasses with you when you head out today. They will be needed.
It’s Saturday and my day to cook for the weekend. On the menu is:
Baked Chicken Parmesan
Makes 4 serving
3/4 c. whole wheat bread crumbs
1/4 c. grated Parmesan , plus more for garnish
1 tsp garlic powder
1 tsp. Italian seasoning
2 eggs
1/4 c. buttermilk
4 boneless, skinless chicken breasts
salt and pepper to taste
1 32 oz., jar of marinara
1 c. shredded mozzarella
1/4 c. thinly sliced basil
Preheat oven to 400 degrees. In a medium bowl, mix together bread crumbs, parmesan, garlic powder dn Italian seasoning . In another bowl, whisk together eggs and buttermilk. Pat breasts dry and season on both sides with salt and pepper. Dip into egg mixture and then dredge in breadcrumbs, making sure all sides are coated. Place in baking dish and bake 20 minutes until lightly golden and crispy.
Pour marinara over chicken breasts and top with mozzarella. Bake unto cheese is melted and chem cooked through, about 10 to 15 minutes more. Garnish with more Parmesan and basil. and serve immediately
I will be making some whole wheat speghetti to have with this and probably a side salad too.
Today’’s pictures of a family craft project we made a few years ago. Some sock snowmen that are very different and unique.
I hope you all have a SUPER Saturday !

I never knew there was a special day for peculiar people. It got me thinking of some very peculiar people that live somewhere in my area - and I'm talking seriously peculiar! Enjoy your chicken parm and the sunny day. I love all the cute snowmen :)
The sock snowmen are adorable! That hobo makes me smile!
I think it's hard, and takes making a conscious effort not to judge someone who behaves outside the lines. (I'm talking personal safety in this upside down world.) But, ya. My mother used to say the same thing: "What a boring world it would be if everyone liked the same things."
Glad we are all uniquely made by God :)
