Today is also Freethinkers Day, which is also known as Thomas Paine Day. Freethinkers Day celebrates the life and work of Thomas Paine who was born this day in 1737. Paine came to America an 1774 as the request of Benjamin Franklin. Through out his life, he wrote many influential books and pamphlets including The Age of Reason, The Rights of Man and Common Sense. Each of these works bright public attention to the key issues and helped establish the philosophical foundaton for the American Revolution.
Paine's writing inspired many people to strive for political, economic and social advancement. He was also one of the first people to call for Universal human rights and an end to slavery.
Freethinkers Day has been celebrated since the 1990’s. It’s purpose is to educate people about Poine’s work and the importance of freethinking and freedom. To celebrate take a moment to appreciate your civil liberties.

This grandson’s birthday is another of my long distance celebrations and as usual I’ll be sending a card in the mail full of birthday wishes and love. Right now I’m a little behind in sending out cards, but never fear. Sooner or later it will get done.
These days all seem to run together for me and before I know it,, It’s later than I think.
For today I do have to cook dinner and on the menu is:
Cauliflower Mac and Cheese
salt to taste
1 head of cauliflower, cut into small florets
vegetable oil spray
1 c. heavy cream
2 oz. cream cheese, cut into small pieces
1 1/2 tsp dijon mustard
1 1/2 c. cheddar cheese shredded plus 1/2 c. more for topping
1/4 tsp pepper,
1 tsp garlic powder
Preheat oven to 375 degrees . Bring pot of water to boil . Season with salt.
Spray the baking dish with vegetable spray.
Cook the cauliflower the boiling water until crisp tender. Drain well and pat between several layers of paper towels.
Transfer to the baking dish and set aside.
Bring the cream to a simmer in a small pan and whisk in the cream cheese and mustard until it is smooth. Sir in one cup of the cheese, salt and pepper and garlic and whisk just until cheese melts. Remove from heat, pour over the cauliflower and stir to combine.Top with remaining 1/2 cup of cheese and bake until browned and bubbly. About 15 minutes. Serve

Happy birthday to your Star! 🌟 And I wrote about Thomas Paine on my blog once, he was from Lewes, in Sussex, we visited there and I stumbled upon a lovely statue of him in front of their library. I will have to do a search on my blog to see it again! 😊 Your recipe sounds so good!

Happy Birthday to Star! I love cauliflower and cheese both. Now I'm wrapping my mind around trying this in my instant pot, omitting the cheddar and the baking part. What's the worse that could happen? LOL!
