Today is Serendipity Day which is celebrated to encourage people to face those unexpected good things that happen in life. Serendipity means the occurrence and development of any events by chance in a happy or useful way. Its a term that means happy accident or a pleasant surprise.
Its the opportunity to live your life as es if everything is a miracle…with the belief that at any moment something wonderful is about to happen. It is the power within us to make order out of chaos; it makes possibility out of potential and makes reality out of possibility
Today do something unexpected and wonderful such as doing something to take steps towards a dream you have, helping someone take the next step toward their dream, or stepping out of your comfort zone into the unknown. telling those you love that you love them, contacting and long lost friend, making a new friend or doing a random act of kindness, something you usually don’t do, but you can also do something you usually do in a different way in order to experience the thrill of serendipity…the ripeness of the moment.

For me every day is something new and different. We never know what might happen but I do look forward to each new day. We just never know what might be around the corner, but I do hope for the best.
Every day is such a gift, it’s to be treasured and appreciated. I try to plan the days, but that doesn’t always happen. sometimes unexpected things happen that change what I’d planned.
Today is my day to make up a new menu for next week. I don’t always follow it, sometimes I just don’t feel like cooking, but this is what I do my shopping for the week from so I make one up every week.
Menu for next week:
Monday- Chicken Tacos
Wednesday - Broccoli Chicken Casserole
Friday - Alaska Baked Macaroni and Cheese
Weekend - Slow Cooked Bavarian Pot Roast
On the menu for today is:
Beef and Beans
1 lb. ground beef
1 onion, chopped
1 can baked beans, undrained
1 can butter bens, rinsed and drained
1/2 cup ketchup
1/3 cup packed brown sugar
1 tbsp. barbecue sauce
1/4 tsp Worcestershire sauce
In a large skillet, cook beef and onion over medium heat until meant is no longer pink; drain. Transfer to a slow cooker. Stir in remaining ingredients
Cover and cook on high 3 to 4 house or until heated through.
You can also simmer this on low heat using the same skillet you browned the beef mixture in. I usually let it cook about 20 minutes. Stirring occassionally to make sure it doesn’t stick.
We have another chance of rain today, wo I’m hoping to get the shopping done without getting wet. I’ll check the weather channel and see when it might be best.

Serendipity is such a fun word and not used nearly enough. I admire your faithfulness to creating a menu and most of the time it has good variety. I too am wondering about the Alaska baked mac and cheese:)
