Today is National Buttered Corn Day which is celebrated by eating corn with plenty of butter, on the cop or off the cob. Corn can be boiled, roasted, or steamed and can be made on the stove top, in the oven, on a grill or in the microwave.
Cooked corn has significant antioxidant activity, which can sustantially reduce the chance of heart disease and cancer. Cooked sweet corn retained its antioxidant activity. Scientist have measured the antioxidant’s ablility to quench free radicals which damage the body from oxidation. It also releases ferulic acid which provides health benefits. such as battling cancer. So lets eat more corn!

I love eating corn with butter. It’s the season here when we have plenty of it on hand. I’ve had some from the grocery store but have yet to get out and get some from our local farmers market. The season is almost ready to end, so I best make it a point to get out and get some this week. Who knew it had so many good health benefits. It’s not only good but good for us too.
I usually cook mine in boiling water on the stove, but it can be fixed many other ways. My youngest son cooked his in his cooler. He said he got the idea when they attended a Boy Scout camp out. It was delicious and I figure a good way to cook for a crowd. You clean your corn and then lay the ears in the bottom of a cooler.Then boil a lot of water.Pour it over the corn, making sure the ears are all covered.And then close the lid. Let it set 30 minutes and you’ll have perfectly cooked corn. You can’t over cook it since it’s not sitting in constantly boiling water. You can let it set for quite awhile. after its done to keep warm. Its a great method to make the perfect ear of corn in great quantity.
It’s Monday and a day to cook a new meal and on the Menu is
Chicken Tacos
Makes 8 servings
1 can fire roasted diced tomatoes, undrained
1 jalapeno pepper, halved and stemmed
3 cloves garlic, peeled
2 tbsp. chili powder
1 tbsp.ground cumin
1/2 tsp salt
2 lbs. skinless, boneless chicken thighs
15 corn or flour tortillas, warmed
1 cup quacamole, chopped cilantro and lime wedges
Combine undrained tomatoes, pepper, garlic, chili power and salt in a blender, cover and blend until smooth. Pour tomato mixture into a slow cooker.Add chicken thighs, stir to coat.
Cover and cook on low 5 to 6 hours or high for 2 to 3 hours
Remove the chicken and place in a bowl. Shred the chicken using two forks. Add enough sauce mixture from the slow cooker to shredded chicken to moisten. Serve the chicken tortillas, if desired top with guacamole, cilantro and lime wedges.
1 serving equals 2 tacos
I’ll only be making 1/2 this recipe and will still have leftover tacos for Taco Tuesday. I won’t be using a jalapeño pepper because I like my food on the mild side and will use crushed tomatoes instead of diced, so I will not have to put it in a blender.

Eat more corn and stay healthy !
I've read about that method for cooking corn in a cooler -- but never knew anyone who actually did it! When all's said and done, corn on the cob is my favorite veggie. I just don't indulge so often in favor of leafy greens.
Tom's favorite part of the chicken is the dark meat, so I'm going to ask if he thinks he'd like this dish. Anytime I don't have to turn on the stove-top or oven is a win-win!
