Today is National Ice Cream Sandwich Day which celebrates a treat that is always delicious. Ice Cream sandwiches come in many varieties. In their traditional form, vanilla ice cream is tucked between two thin layers that resemble chocolate cake. Other versions include : chipwiches, Ice cream between two chocolate chip cookies.
Varieations of this delight can also be found in different countries. In Austraila,,, the most popular is colled Gian Sandwiches, while Mexicans are half dipped in chocolate. However most exotic ice cream sandwich might be found in Singa pore . Here red bean, yam and honeydew are all popular flavors.
To celebrate today, visit your nearest grocery store to buy some ice cream and get a big ice cream sandwich. Enjoy!

Ice Cream cravings are not to be taken lightly.

Ice Cream Sandwiches are a quick summertime dessert.. I like to spread a little extra chocolate syrup on mine. They are delicious! I’ll be sure to have one today to celebrate.
On the menu for today is:
:Quesadillas al Pastor
Serves 8
2 cups chopped fresh pineapple
1./2 ;chopped frsh cilantro
1/4 cup finely chopped red onion
2 tbsp. fresh lime juice
1/2 tsp. salt
1 lb. prepared shredded smoked pork
1 ripe avocado diced
1/2 cup finely chopped red bell papper
8 oz. Montery Jack cheese, shredded
8 flour tortillas
1/2 cup butter
Combine pineapple , cilantro, red onion, lime juice and salt in a medum bowl.
Toss pork with 1/2 cup pineapple mixture. Add avocado and bell pepper to the remaining pineapple mixture. Set aside.
Sprike 1/4 cup of cheese over 4 tortillas; top evenly with pork mixture. Sprinkle evenly with remaining chese and top with remaining tortillas.
Heat 2 tbsp. butter in a large nonstick skilled over medium high heat. Add 1 quesadilla to skillet and cook until golden brown and cheese is melted. Repeat with remaining butter and quesadillas. Cut in half and serve with remaining pineapple relish and lime wedges.
This could also be served as an appetizer but for me it will be dinner. I didn’t have leftover pork on hand so bought some pulled pork in the store to use. I also used canned crushed pineapple instead of fresh.
Today is supposed to be a mostly sunny day and that always makes me happy.
