The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

THOUGHT FOR TODAY
You can never get a cup of tea large enough or a book long enough to suit me.
C.S. Lewis
Even though this son lives close by, I may not see him today. The pictures are from last years birthday. I did just see him yesterday and wished him a happy birthday then. I have a doctors appointment this morning and we’ll see how the day develops after that. I’m not sure of what this new doctor will have to say, but am praying it’s nothing too bad. We will see…
I read books mostly on my Kindle these days but do still have several books on the shelves here that I’ve already read and hope to read again. Of course I also have cook books on those shelves and many gardening books too. And; in the craft nook I have lots of painting books that I keep on hand. I wouldn’t part with any of them.
They are only a fraction of what I used to have before I moved, but I had to keep my favorites.
I start a new book just about every other day. There seems to never be a time but that I’m reading. I say they are what got me through the Pandomenic. When we couldn’t go any place or do anything, books kept me going.
Truth is I’d get a lot more done here if I didn’t read so much, but it’s a habit I cannot seem to break.
I may not get much done, but I do read a lot of books.
It’s Monday and my day to cook, if I can get my nose out of a book long enough. On the menu is:
Chili Cornbread Casserole
Makes 6 servings
1 pound lean ground beef
1 tbsp cornstarch
1 tbsp.dried minced onion
1 tsp chili powder
1/2 tsp. garlic powder
1 can, 15 oz. tomato sauce
3/4 cup flour
3/4 cup yellow cornmeal
3 tbsp sugar
1/2 cup milk
3 tbsp vegetable oil
1 can cream style corn
1 cup shredded cheddar cheese
Optional: Sour cream and salsa
Preheat ove to 375 degrees. In a larch skillet, cook beef over medium heat until no longer pink, breaking into crumbles, drain. Stir in cornstarch, onion, chili powder and garlic powder. Stir in tomato sauce.Cook and stir until thickened.
In a large bowl, whisk flour, cornmeal, sugar and baking powder. In another bowl, whisk eggs, milk and oil until blended, stir in cream corn . Add flour mixture, stir just till moistened. Stir in cheese.
Spread half the batter into a greased 2 quart baking dish. Top with beef mixture. Spread remaining batter over filling.
Bake uncovered until a toothpick inserted in cornbread portion comes out clean. 25 to 30 minutes. Let stand 5 minutes before serving , If desired. serve with sour cream and salsa.
Instead of sour cream, I’ve been using plain yogurt these days and I happen to like beans in my chili so will also add those to the beef mixture.
I hope you all have a GREAT start to this new week. Happy Monday!

that with all who love them
they may ever praise you for your loving care.

Life is such a precious gift, we have to take time to celebrate it !
Happy Birthday to your DS#5!
I, too, had to part with many of our 'real' books when we moved. Being an only child, I think books were my first friends. Certainly, the most loyal. 🤗
