Today is National Senior Citizens day which celebrates the people wo are part of the fastest growing demographic in the world. According to the traditional definition a senior citizen is anyone over 60 years of age, but this seems relatively young in today’s society. When it comes to new technologies, adults above the age of 55 represent 65 percent of all early adopters. This demographic is also the most politically engaged segment of the population. Almost 80 percent of all senior citizens vote in a presidential election, while the over all voter turnout is usually around just 50 percent.
President Ronald Reagan proclaimed the first National Senior Citizens Day in 1988. In his explanation he wrote that Older citizens are reinforcing their historical roles as leaders and as links with our patrimony and sense of purpose as individuals and as a Nation.
In honor of today let all the Seniors in your life know you are thinking of them. If you are a senior citizen yourself, take time to relax and enjoy the day.

I’ve been a Senior Citizen for quite a while now and am very happy to say I’m enjoying it to the fullest. Not everyone gets to live to see retirement. I’ve been retired over 10 yeses now and still going. I’ve slowed down a lot but that’s not all bad. There are lots of benefits to slowing down and enjoying live. If you slow down, you often see a lot more than when you’re going too fast.
It’a Saturday and my day to cook for the weekend. And on the menu is:
Potluck Taco Casserole
Makes 8 servings
2 lbs. lean ground beef
2 envelopes taco seasoning
4 eggs
3/4 cup milk
1 1/4 cups biscuit baking mix
dash of pepper
1/2 cup sour cream
2 to 3 cups chopped lettuce
3/4 cup chopped tomato
1/4 cup chopped green pepper
2 green onions chopped
2 cups shredded cheddar cheese
Preheat oven to 400 degrees. In a large skillet, cook beef over medium heat until no longer pink, breaking into crumbles; drain. Add taco seasoning and prepare according to package directions. Spoon meat into a greased 13 by 9 inch baking dish.
In a large bowl, beat eggs and milk. Stir in biscuit mix and pepper. Pour over meat. Bake uncovered 20 to 25 minutes or until golden brown. Cook 5 to 10 minutes.
Spread sour cream over top; sprinkle with lettuce tomato, green pepper, onions and cheese..
I’l be making only 1/2 this recipe which is way too much for me and I’ll still have leftovers for tomorrow.It’s a good dish to take to potluck suppers and is always a nice addition.
It’s looking to be a quiet weekend here and I’ll have no one to share this with so making 1/2 the recipe is good idea for me. The weather is getting hot and it will be a cool summertime dish.
